I can never have enough of muffins or cupcakes recipe. Each time i try different recipe and each time i keep on loving this. This is a fluffy and soft muffin recipe which can be easily transformed into a cupcake by making a little frosting on top. This vanilla and chocolate muffin recipe turned out to be super soft and light. Hope you will give this a try and let me know how it turns out for you.

Baking Time : 25 mins
Makes : 8 to 10 muffins
All Purpose Flour / Maida – 1 cup / 120 grams
Baking Soda / Cooking Soda – 1/2 tsp
Salt a pinch
Warm Water – 3/4 cup / 180 ml
Sugar – 1/2 cup / 100 grams
Vinegar or Lemon Juice – 1/2 tblspn
Vanilla Essence – 1 tsp
Oil or Melted Butter – 3 tblspn
Cocoa Powder – 2 to 3 tblspn
Preheat oven to 180 degree C. Line muffin tray with cupcake wrappers and set aside.
Take flour, baking soda and salt in a bowl and mix well.,Set aside.
Take water, sugar, oil, vanilla and vinegar in a bowl and mix well till sugar is melted.
Add flour mix in and fold gently.
Divide the batter into two moulds.
In one mould add cocoa and fold gently.
Take vanilla batter and fill the cupcake mould half way, top with cocoa batter.
Bake this for 20 to 25 mins. Insert a toothpick to check whether the cake is done or not.
Remove it and set aside to cool down.
