    Fruit Cocktail Cake Recipe with step by step pictures. This moist cake has a simple coconut icing that got drizzled over the top of the cake once it was baked.

    Fruit Cocktail Cake

    Yesterday evening I experienced the best surprise in my life. My hubby gave me a gift which I have dreamt. Want to know the gift, wait till tomorrow. Now back to the recipe. I had some leftover fruit cocktail after my trifle recipe. Wanted to try a cake with that, I know it will taste great in a cake so decided to go for it. I made a simple cake and topped it with a buttery coconut sauce. Actually the cake doesn't have any fat in it so that icing is rich and buttery which really makes it.

    Ingredients for Fruit Cocktail Cake Recipe

    • All Purpose Flour / Maida - 1 cup / 120 gms
    • Sugar - ¾ cup / 150 gms
    • Baking powder - 1 tsp
    • Baking Soda - ½ tsp
    • Fruit Cocktail - 1 cup chopped finely / 150 gms
    • Fruit Cocktail syrup - ½ cup / 120 ml / 4 fluid ounces
    • Egg - 1
    • Vanilla - 1 tsp

    For Coconut Butter Sauce:

    • Sugar - ½ cup / 100 gms
    • Milk - ½ cup / 120 ml / 4 fluid ounces
    • Butter - 5 tbsp
    • Desiccated Coconut - ½ cup / 75 gms
    • Walnuts - 5 tbsp chopped

    How to Make Fruit Cocktail Cake

    1. Preheat the oven to 170 Degree C / 340 Degree F.
    2. Take flour , baking powder and baking soda in a bowl. Mix well and set aside.
    3. Now take egg, sugar and vanilla in a mixer and beat till fluffy.
    4. Add in the fruit cocktail juice and beat again.
    5. Now add in the flour mixture and combine well.
    6. Add the fruit cocktail pieces and fold well.
    7. Pour this in a buttered dish and bake it for 45 mins.
    8. Remove from the oven and keep aside.
    9. Now make the icing. Take sugar and milk in a sauce pan and heat it up.
    10. Add butter and mix well. Keep mixing till it gets thick and creamy.
    11. Now add in the coconut and mix well.
    12. Pour this icing over the cake, the cake will absorb the icing quickly.
    13. sprinkle some walnuts over it.
    14. Slice and serve.

    • 1 cup / 120 gms All Purpose Flour / Maida

      hello mam , walked through your kitchen. well organised kitchen. i have noticed one thig that you have changed your OTG,NOW YOU ARE using Morphy Richard OTG. Please share some details of your new OTG.How do you do grilling baking,broiling in your new OTG? i already have one but planning to buy another one, your providing details regarding OTG will be great help.
