Grilled Cheese Sandwich with Tomato & Coriander Dipping Sauce

Grilled cheese sandwich and tomato soup is a very good combo in food. I took that idea and made a coriander tomato sauce to go with it and it tasted absolutely delicious. Loved every bit of it.

The sauce which i made is so easy to make and not only it taste good with sandwich, you can toss some hot cooked pasta in this sauce and have it. This sauce can be kept in fridge in a clean jar for a week or so.

Preparation Time : 10 mins
Cooking Time : 20 to 30 mins
Makes : 4 Sandwiches


Ingredients:

For Grilled Cheese Sandwich:

Bread Slices – 8
Mozzarella Cheese – 2 cup grated
Butter – 4 tblspn


For Dipping Sauce : 
Tomatoes – 2 large chopped
Garlic – 4 cloves chopped
Coriander leaves + stalks – a small bunch chopped
Chilli Powder or flakes – 1 tsp or to taste
Salt to taste
Sugar – 1 tsp
Oil – 3 tblspn
Oregano – 1/2 tsp
Tomato Ketchup – 3 tblspn (optional)


Method:

Start by making the dipping sauce. Take all the ingredients except oil and oregano in a blender and make it into a smooth puree. Heat oil in a pan, add the sauce and cook covered for 10 mins or so till oil separates.Now add in oregano and mix well. Remove it and serve with sandwich.

For Making sandwich, take a slice of bread, spread butter over it. Sprinkle 1/2 cup of cheese for each sandwich. Cover with another slice. Grill this in a pan or grill till golden.

Remove it, cut into slices and serve with sauce.

Pictorial:
First lets make the dipping sauce..
Take tomatoes in a blender
add few peeled garlic
add in red chilli powder
now add in salt and sugar, you can add some
 tomato ketchup to this, it gives a very nice taste
add a bunch of chopped coriander leaves and stem
cover with a lid
make it into a smooth puree
heat oil in a pan
add in tomato sauce in
mix well..
cover and cook this for 10 mins or so
add in oregano
mix well
cook till oil separates on top
Dipping sauce done
Now lets make the grilled cheese
take some mozzarella cheese
grate them
take your bread slices
butter them
spread cheese generously
cover with another slice..Butter both sides of the bread
grill them on both sides
cut into strips
Serve
Taste just fantastic
