Ina Garten’s Carrot Salad Recipe – Barefoot Carrot Salad Recipe

This is one quick and healthy salad which i made few days back. It was very cooling and refreshing, i loved it so much. I used half may and half yogurt for health reason, you can have a bowl of this for lunch, it keeps you filling for a long time. This is a cooling and tasty salad.

Preparation Time : 10 mins
Serves: 3 to 4


Ingredients:

Carrots – 2 large peeled and grated (about 2 cups)
Pineapples – 1/2 cup chopped
Sultanas / Kishmish – 3 tblspn
Mayonaisse – 3 tblspn
Yogurt or Sour Cream – 3 tblspn
Sugar – 2 tsp
Salt to taste
Pepper to taste
Lemon Juice – 1 tsp or to taste

Method:

Soak some sultanas in hot water for few mins. Drain and set aside.

Take all ingredients in a bowl and mix gently.

Serve immediately.

Pictorial:

Peel some carrots
grate them and chop some pineapples
take your ingredients
soak some raisan in hot water
take mayo in a bowl..i used homemade eggless ones..
add some plain yogurt or sour cream
add salt and pepper
add some sugar
add lemon juice
mix well
add carrots
add pineapples
add raisans
mix well
