Carrot Salad
This is one quick and healthy salad which i made few days back. It was very cooling and refreshing, i loved it so much. I used half may and half yogurt for health reason, you can have a bowl of this for lunch, it keeps you filling for a long time. This is a cooling and tasty salad.
Ingredients for Carrot Salad
- Carrots - 2 large peeled and grated (about 2 cups)
- Pineapples - ½ cup chopped
- Sultanas / Kishmish - 3 tblspn
- Mayonaisse - 3 tblspn
- Yogurt or Sour Cream - 3 tblspn
- Sugar - 2 tsp
- Salt to taste
- Pepper to taste
- Lemon Juice - 1 teaspoon or to taste

How to Make Carrot Salad
- Soak some sultanas in hot water for few mins. Drain and set aside.
- Take all ingredients in a bowl and mix gently.
