I thought to a kerala breakfast style thali. planned to put coconut milk aapam along with a nadan egg curry and this yummy vegetable stew. Sounds good right. You have to wait to taste this yummy combo. You will be in heaven..The master piece in this thali is the vegetable stew. It is so simple to make, but each mouthful is full of coconut goodness..This is a perfect combo with aapam, but you can serve it with plain white rice too along with any spicy curry.

Kerala vegetable stew is an aromatic, mildly spiced, creamy, veggie- packed coconut curry. A stew is a dish made up of solid food ingredients cooked in liquid and served with the resulting gravy. Raw ingredients must be added to the gravy of a stew.
Ingredients for Kerala Style Veg Stew Recipe
Onion:
Onions are considered a basic ingredient or the foundation of Indian cooking and are used to make any gravy, curry, or bhuna dish. The flavour and aroma of onion transforms any ordinary dish into a mouthwatering and delectable one.
Green Chilli :
The green chillies in cooked or raw form give a fiery hot flavor. To reduce the fiery hot flavor the seeds and inner membranes could be removed which is effective at reducing the heat of the pod.
Carrot :
Depending on the colour, size, and region of cultivation, this well- liked and adaptable vegetable may have a slightly different flavour. Carrots have a slightly sweet flavour from the sugar in them, but they can also have an earthy or bitter flavour.
How to Make Kerala Style Veg Stew Recipe
- Heat coconut oil in a pan. Add cinnamon and cardamom and saute for a min.
- Add in onions and saute for 3 mins. Add in ginger and garlic paste and mix well.
- Add in all the veggies along with green chilli and mix well.
- Add in salt and sugar and the thin coconut milk.Mix well, bring this to a boil and simmer till the vegetables are cooked.
- Now turn off the heat and add the thick coconut milk and mix well.
- Serve with aapam.

Ingredients
- Onion - 1 sliced
- Green Chilli - 2 Slit
- Ginger Garlic paste - 1 tblspn
- Carrot - 1 large chopped
- Beans -5 chopped
- Potato - 1 large peeled and chopped
- Peas - 1 cup cooked
- Thin Coconut Milk - 2 cup
- Thick Coconut Milk- 1 cup
- Salt to taste
- Sugar - 1 tsp
- Coconut oil- 1 tblspn
- Cinnamon / Pattai - 1 small stick
- Cardamom / Yelakai - 2 crushed
Instructions
- Heat coconut oil in a pan. Add cinnamon and cardamom and saute for a min.
