Kerala Style Vegetable Stew / Mixed Vegetable Stew / Vegetable Ishtew – Sidedish for Aapam

I was so much inspired to do coconut milk aapam as soon as I saw that it one of the blog. Since srivalli has announced Thali Mela. I thought to a kerala breakfast style thali. I planned to put coconut milk aapam along with a nadan egg curry and this yummy vegetable stew..Sounds good right..You have to wait to taste this yummy combo..You will be in heaven..The master piece in this thali is the vegetable stew…It is so simple to make, but each mouthful is full of coconut goodness..This is a perfect combo with aapam, but you can serve it with plain white rice too along with any spicy curry..

Ingrediants:

Onion – 1 sliced
Green Chilli – 2 Slit
Ginger Garlic paste – 1 tblspn
Carrot – 1 large chopped
Beans -5  chopped
Potato – 1 large peeled and chopped
Peas – 1 cup cooked
Thin Coconut Milk – 2 cup
Thick Coconut Milk- 1 cup
Salt to taste
Sugar – 1 tsp
Coconut oil- 1 tblspn
Cinnamon / Pattai – 1 small stick
Cardamom / Yelakai – 2 crushed
Method:
Heat coconut oil in a pan. Add cinnamon and cardamom and saute for a min.
Add in onions and saute for 3 mins. Add in ginger and garlic paste and mix well.
Add in all the veggies along with green chilli and mix well.
Add in salt and sugar and the thin coconut milk.Mix well, bring this to a boil and simmer till the vegetables are cooked.
Now turn off the heat and add the thick coconut milk and mix well.
Serve with aapam.

Take all your ingrediants
Heat coconut oil and add cinnamon and cardamom
add onions
ginger and garlic paste and saute well
add in all vegetables and chilli
add salt and sugar
pour in thin coconut milk
cover and cook till the veggies are done
all cooked and boiling
Switch off the flame and add in thicker creamier coconut milk
mix well
Serve
