Linzer Cookies Recipe

As soon as i saw this video on youtube, i know i have to give it a try. It is such a cute cookie to try but taste so delicious and pretty easy to make as well.

These cookies make a great holiday treat as well as a great christmas present. You can put them in small plastic cover, tie them with a ribbon and you are good to go..
These are not only great for christmas, it makes a great recipe for valentines day as well. The only thing is use the best tasting and your favourite jam in this..

Preparation Time : 10 mins
Chilling Time : 2 hours
Baking Time : 10 to 15 mins
Makes : 20 to 24 cookies

Ingredients:
Soft Unsalted Butter – 3/4 cup / 170 grams
Sugar – 1 cup / 200 grams
Vanilla Essence – 2 tsp
Eggs – 2
All Purpose Flour / Maida – 3 cups / 360 grams
Baking Powder – 1/2 tsp
Salt – 1/4 tsp
Jam – as needed (Use any of your favourite jam)
Icing Sugar / Confectioners Sugar – 3 to 4 tblspn

(My 1 cup measures 240 ml)

Method:
Take butter, sugar and vanilla in a bowl and whip till creamy. Now add in one egg at a time and whip till fluffy.
Add in flour, baking powder and salt and whip again till it is mixed into a soft dough.
Now wrap this in plastic and chill this for couple of hours.
Once the dough is chilled. Cut it in half.

Now preheat oven to 180 degree C.

Roll the dough into 1/4 inch thickness and use a round cutter to cut out circles. Now use smaller cookie cutter to cut out some of the round cicles to create a window pattern through which the jam can show when they are sandwiched.

Arrange it in a parchment lined baking tray.
Bake for 12 to 15 mins. If your cookies are thicker it may take upto 15 mins.
Now remove it from oven and cool it down completely.

Now take the whole cookies and arrange it bottom size up on a plate. Smear jam over it, now in the cut out top cookies sprinkle with icing sugar. Now sandwich the cookies together.

Now store this in a air tight container.

Take all your ingredients
Take soft butter in a bowl
add in sugar
add in vanilla
use a beater to whip this up
now it is well creamed
add in one egg at a time
whip well
add another egg
whip till creamy
add in flour
add in baking powder and salt
mix well
make it into a soft dough
spread a sheet of plastic wrap
place the dough in
wrap it well
chill this for couple of hours
Take half of the dough
Warm it with your hands and shape it into round
roll it out
You need a big round cookie cutter and small ones
U can see the cutter size now..
Dip the cutter in flour
cut out cookies
remove the extra
Now dip the small cutter in flour as well
cut out the inside part
like this
arrange it in a baking tray
Now bake this for 10 to 15 mins
Remove it to a cooling rack and cool completely
Take the whole cookie
Flip it over, so the bottom comes on the top
arrange it in a plate
Take your favourite jam
dollop it over and spread lightly
Now place the top of the cookies in a rack..
sieve some icing sugar on top

    Hi aarthi how many days can these cookies be kept outside?And can i prepare the dough a day before and keep in fridge and bake it next day or so.
