Nan Khatai, i have been waiting to bake this cookies for a very long time. And few weeks back, i visited my pregnant friend, so i thought it would be great if i take something homemade for her. Then i decided to bake these cookies, i also baked another batch of cashew cookies which i will share soon.

Ingredients for Nan Khatai
- All Purpose Flour / Maida - 1 cup / 120 grams
- Gram Flour / Besan / Kadalai Mavu - ½ cup / 60 grams
- Ghee / Melted Butter / Oil - ½ cup / 120 ml
- Powdered Sugar - ½ cup / 100 grams
- Cardamom Powder - ½ tsp
- Baking Powder - ½ tsp
- Baking Soda - ¼ tsp
- Milk - 1 tbsp or as needed
- Pista - a handful finely chopped
This cookies is made so many different ways, Basically it is a eggless indian cookies. It is either made with atta or besan. This time i used besan to make this cookies, will share another version soon. These cookies just melts in your mouth. They are delicious. Hope you will give this a try and let me know how it turns out for you.
How to Make Nan Khatai
- Preheat oven to 180 Degree C. Line a baking tray with foil and set aside.
- Take flour, gram flour, baking soda, baking powder in a bowl and mix well.
- Take Ghee, powdered sugar, cardamom powder in a bowl and use a whisk to mix well.
- Now add in the flour mix and fold well. Add milk and knead to a soft dough.
- Take small portion of the dough and roll it into a ball. Dip it in chopped pista and arrange it in tray.
- Bake for 15 to 20 mins or till golden.
- Remove from oven and let it cool completely.
- Store in a air tight container and Serve.

Ingredients
- 1 cup / 120 grams All Purpose Flour / Maida

2)Dont over bake the cookies, the cookies may look soft when you take them from oven and it will harden as they cools.
3)This cookies stays good for a week in a air tight container. You can store them in fridge too.

Inthat instead of cake tin, you can place a tray or a plate that is lined with foil. then put the cookies over the tray and put it inside the cooker. Cover and cook for 10 mins or so, check whether the cookies is done in that time. if not cook for more.

I used this recipe and mine turned out great!!
Perfectly soft and melt in mouth. I baked them for exactly 15 mins only and this recipe made exactly 18 of them. This will be my go-to now.

Can u give the exact measurement for besan flour and sugar as both says 1/2 cup but in GMs it says diff measurement

Hi arthi Iam a big fan of ur blog. I have tried a lot of recipes from your blog and they all turned out perfect though this nan khatai was the only one that did not worked out for me. Taste was good but it was not very soft and they all got mixed together once baked. It was like a sheet and I had to cut it separate. Please let me know where I went wrong

Hi aarthi ,ur blog really has good recipes,at very first I tried tutifrity cookies which came out pretty well but this Tym I tried naan khatais ,didnt came out good, not crunchy like a cookie rather feels little unbaked though I baked for almost 25 mins at 200c.pls tell whr I went wrong.

Hi arathi , I tried this recipe today but there were few mistakes that I did I think. I have a smaller oven instead of an otg. So I put the nankhatais in two trays and kept one on top of the other by using a stand. But the cookies in the top one completely burnt . Can you tell me what to do in case of smaller ovens. Should we do it in two batches repeating whole process. Or can we do the process once and bake twice in two batches ?
