Nigella Lawson’s Chocolate Banana Muffins

Its been very exciting and thrilling for me that tomorrow is said to be a doomsday, but till now there are no such disaster going on here. What do you think guys, will the world come to an end or not?

Lets get rid of the doomsday, Probably you must be aware I am a craziest nigella lawson’s fan. I own pretty much all her cookbooks. Everytime i watch her cooking show or go through her recipe book, i feel like trying out all her recipes. The reason for that is the simplicity and the quick mode of her recipes.

This is one of the recipe from her cookbook, Nigella Kitchen. If you have not bought it yet, I highly recommend it..It is a amazing cookbook guys. I love it..

When i found this recipe in that cookbook, i wanted to try it immediately. Because it is so easy to make, i pretty much had all the ingredients on hand. So i tried it immediately. The muffins turned out so great. It was perfect with a cup of chai or coffee, they were not too sweet, it was like a perfect muffin. So give it a try and let me know what you think.

Preparation Time : 10 mins
Cooking Time : 15 to 20 mins
Makes – 12 muffins 
Recipe Source: Nigella Kitchen Cookbook

Ingredients:

Banana – 3 very ripe (Mashed)
Oil – 125 ml / 1/2 cup
Eggs – 2
Sugar – 100 gms / 1/2 cup (See Notes)
Cocoa Powder – 3 tblspn
All Purpose Flour – 225 gms
Baking Soda / Bicarbonate of soda – 1 tsp
Walnuts of any nut of your choice to sprinkle on top.

Method:

Preheat the oven to 200 Degree C / 400 degree F. Line 12 bun muffin tin with cupcake cases.

Take a mixing bowl, add in banana, oil, eggs,sugar, cocoa and mix well.

Add in flour, baking soda and fold gently till combined.

Now take a icecream scoop and fill the muffin cases with the batter.

Sprinkle few walnuts on top of them.

Bake them in the oven for 15 to 20 mins, insert a toothpick to see the doneness.

Remove from the oven and let them cool on the tin for 10 mins.

Remove them from the cases and leave them to cool comepletely.

You can enjoy this muffin by spreading some soft butter with a cup of chai or coffee.

Notes:

These muffins are not so sweet, they are perfect with a cup of coffee or chai. If you want them sweet, you can add more sugar.

Pictorial:

You will need, flour, sugar, cocoa, oil,
mashed banana, baking soda..
Dont forget the eggs like i did..
Take bananas in a bowl
add oil to it
add in a couple of eggs..NOT WHOLE..
Crack it up
add in some sugar
and some cocoa
and give a good mix
Now add your flour in
along with a tsp of baking soda
and give a mix
line cupcake cases in your tray
scoop some batter using a icecream scoop
and drop them in
sprinkle some nuts in..I had some mixture of nuts
these babies are ready to be baked
all baked
Let them cool down before digging in
Enjoy..

    I ve tried many of ur recipes and they all turned out hits.Could you tell me what you use to measure the flour etc.Is it a digital kitchen scale?I need to buy one.Could you advice on tht.Thanks a lot.

    Just had this one request. It would be very helpful if the measurement in grams is given in cups too. I've noted that you usually add it, but here how much is 225grams in cups?

    Tried it aarthi. Came out perfert.
    I added little curd and extra sugar and muffins turned soft and so chocolaty..

    Is paper cups neccessary? can't we put the batter directly into the tray?
