    Finally i have posted my lil girls pics on facebook..Many of you have asked for it, so i am sharing it in my blog too..This picture was taken on her 4th month. Now she is on her 5th month, turning so naughty and doing new stuffs each day..She is such a cutie pie, she is making my life meaningful..love her so much..

    Now coming back to today's recipe..Ever since i made the fried crumbed chicken,
    i wanted to try out the baked version of it..When i came across this
    recipe, i wanna try it so badly. And i tried it and it was so crispy yet
    juicy. Hubby loved it so much and finished most of it by himself.

    There is few tips to make the chicken crispy..I placed the crumbed chicken over hot oil, that ensures the crumb turn really crispy..This is a little spicy dish, if you wish you could reduce the chilli level and make it less spicy..You can check out my baked chicken nuggets and fried chicken nuggets..So try it and let me know how it turned out..

    Preparation Time : 15 mins
    Marinating Time : 8 Hours or Overnight
    Cooking Time : 1 hour
    Serves - 3 to 4

    Ingredients:

    Chicken - 500 grams (With Bone)
    Breadcrumbs - 3 cups
    Salt - 1 tsp
    Garam Masala Powder - 1 tblspn
    Eggs - 2
    Oil - ¼ cup

    For Marinade:
    Garlic - 10 cloves
    Ginger - 2 inch piece
    Green Chilli - 6
    Lemon Juice - 3 tblspn
    Salt to taste

    Method:

    Take marinade ingredients in a blender and make into a fine paste. Take that in a bowl, add in chicken pieces and mix well. Cover this with plastic wrap. let this marinade for 3 to 4 hours or overnight in fridge.

    Now remove it from fridge and let it come to room temparature.

    Mix garam masala and salt with breadcrumbs in a bowl and set aside.. Beat eggs in a separate bowl and set aside.

    Take the chicken out of marinade and roll it in breadcrumbs. Now dunk them in egg mixture, roll them again in breadcrumbs and place it in a rack or plate. When you have finished with every piece of chicken, leave to sit for 10 mins.

    Preheat the oven to 220 Degree C / 440 Degree F.

    Take a baking tray, pour oil in it, place the tray in oven and let it heat for 10 to 15 mins.

    When it is hot, place the chicken on the tray and put it back in the oven, lower the oven temparature to 200 degree C / 400 Degree F and cook for 20 mins.

    Now take the tray from oven and flip the chicken over and cook again for 25 mins.

    Remove from oven and drain it in paper towel.

    Serve with ketchup or sweet chilli sauce.

    Take a chicken

    Coat in breadcrumb

    When it is coated on all sides

    Dip it in egg
    Pin
    Now take it out of egg mixture

    Coat again in breadcrumbs

    When it is well coated

    Place it in a plate
    Pin
    All done..

    Take a baking tray, cover it with oil in a single coating

    Put it in oven and heat it up

    When it is hot, place the chicken in it

    Bake it for 30 mins..

    Flip over and cook again

    Serve

      Great tip about the hot oil.. Nice recipe.. the one thing I'd do differently is cover the pan with foil - makes cleaning up so much easier.

      really Yummy. can we make breadcrumbs at home? bcz i don't find them in my grossery store.

      @MadhuYes u can make breadcrumbs at home, just toast some bread in a toaster and toast them, then cool it and powder it. Or you can even powder rusk which you can get from store. You can dry bread in oven for few minutes till it turns cripsy, powder it. If you want fresh breadcrumbs, chop up bread slices put it in freezer till it is frozen, then powder it in mixie, you can store this in ziploc bag in freezer.
