    Rava Laddu also known as Rava ladoo, suji ke laddu is a popular sweet made all over India during special occasions like Diwali, Krishna Jayanthy or Ganesh Chaturthi. Rava laddu is made with sooji, sugar, ghee, cashews, kishmish and cardamom. Sometimes dried fruits, sweetened condensed milk and cloves are added to make it even more special. Learn how to make this simple and delicious 10 minutes rava laddu recipe made using sooji with step by step pictures and video.

    Rava laddu is my Aachi’s speciality sweet. She never miss to make a batch of rava ladoo during special occasions. She often makes this for our evening tea time snack as well. Her rava ladoo taste so good and it has satisfied many of our sugar cravings.

    Today I made 3 ladoos, rava ladoo, coconut ladoo and sugar free dates nuts ladoo. Since one of my viewer asked for rava ladoo recipe, I am posting this now. If any of you need any other ladoo recipe to be posted today, leave a comment I will post them soon.

    This ladoo was on my Diwali list for so many days. I also got a request from my viewer to post this recipe before Diwali. I finally made it today and it was delicious. So with no more delay off you go to the recipe.

    About Rava Laddu Recipe

    Laddu is also known as ladoo which means balls. Small round ball shaped sweets is known as ladoo. Some of the most popular ladoos are motichoor ladoo, boondi laddu or coconut laddu. For traditional ladoo, check my ragi simili urundai. Rava laddu is one of the most popular laddu recipe you can ever make. Also it is pretty easy to make, it can be made under 10 minutes. 

    The only cooking in this laddu is roasting sooji till golden and aromatic and frying nuts and dried fruits in ghee. Other than that, it is a matter of roasting the ingredients, grinding and shaping into balls. Aachi always use less ghee when making rava laddu, and she uses milk when shaping laddu into balls. But if you prefer to store this for longer period, you can add more ghee and make laddoo.

    Slowly add milk and make ladoos. Make sure you check my other ladoo recipes as well. This ladoo can be made for parties and any festivals.

    Sooji | Rava - use finest quality sooji you can find. Sooji has to be toasted till golden and aromatic. You can dry toast sooji instead of frying in ghee. 

    Sugar - Depending on your sweetness level, you can add more or less sugar to your taste. You have to use white sugar which doesn’t alter the colour of the laddu. 

    Ghee - pure desi ghee is preferred. If possible use homemade ghee.

    Cardamom & Cloves - the main flavouring in a rava laddu is cardamom. Sometimes cloves are added, but make sure to use just one or two cloves else it may overpower.

    Dried Fruits and Nuts - I used a combination of cashews and raisins. 

    Milk - I used milk when shaping laddu into balls. But if you prefer to store this for longer period, you can add more ghee and make laddoo.

    Rava Laddu in 5 Easy Steps 

    Roasting Sooji - Roast sooji in ghee till toasted, golden and aromatic. 

    Grinding Sooji with Sugar - Take sooji and sugar with cardamom and cloves in a blender and make it into a fine powder. Mix everything in a bowl.

    Frying Nuts & Dried Fruits - Fry some nuts and dried fruits in ghee and add to the sooji.  

    Making Rava Ladoo Mix - Add little milk at a time and mix well to a coarse mixture.

    Shaping into Ladoos - Take small portion from this and shape into ball. Enjoy.

    How to Make Rava Laddu (Stepwise Pictures)

    Roasting Sooji

    1)Take sooji or rava in a pan. Dry roast sooji on low to medium heat till slightly golden and aromatic.

    Once sooji is well roasted, take it in a plate or bowl and let it cool completely.

    Powder Sooji

    2)Take the cooled roasted sooji in a blender. You can make this into a fine powder or a coarse powder.

    4)take the powdered sooji in a bowl.

    Powder Sugar

    5)Now in the same blender, add in sugar. You have also add in cardamom and cloves which I missed to take a picture. Add cardamom and cloves in to the sugar when powdering.

    6)You have to powder sugar to a fine texture. Once the sugar is powdered, you can add this in the same bowl as sooji.

    7)Now add the powdered sugar to the sooji mix.

    8)Mix this really well.

    Frying nuts

    9)Heat ghee in a pan. Let it get slightly hot.

    10)Add in cashews and raisins. Fry this till golden brown.

    Making Rava Laddu Mix

    12)Add the fried nuts and dried fruits along with ghee into the rava laddu mixture. Mix it really well into the sooji mixture.

    13)Add in little warm milk at a time and mix well. You have to use either warm milk or hot milk in this process.

    Pro Tip: I used milk when shaping laddu into balls. But if you prefer to store this for longer period, you can add more ghee and make laddoo.

    15)Take small portion from the crumbled rava ladoo mixture.

    16)Shape it into a tight ball.

    Variations

    Rava Laddu with Condensed Milk

    This ladoo taste completely different because it is made from condensed milk. So it has a rich milk taste to it..And it is so easy to make, to satisfy your urgent sugar craving. This version of rava ladoo is made using sooji, condensed milk. This is easy to make and taste absolutely delicious.

    Always keep an eye when roasting sooji, it may get burned sometime. I didn't powder the rava so i got a little coarse textured ladoo. You can powder it if you want a smooth one. You can increase the condensed milk level as per your taste. ⅓ cup gives a little less sweet taste. Don't go over ½ cup.

    Ingredients 

    • ½ cup Rava | Sooji
    • ⅓ cup Sweetened condensed milk  or to taste
    • 2 tbsp Ghee 
    • 1 tbsp Cashews
    • 1 tbsp Kishmish 
    • 1 tbsp Tutti Fruity 

    How to Make Easy Rava Ladoo Recipe

    1)Take all your ingredients.

    2)Heat ghee in a pan. Add in cashews, tutti frutti, and raisins. Fry till golden and remove it to a bowl.

    3)In a pan roast sooji till golden and aromatic. You can powder this roasted sooji till fine in a blender. Take this in a bowl.

    4)Add condensed milk into the sooji.

    5)Mix this really well. You can add more condensed milk if needed.

    6)Add in fried nuts and dried fruits.

    8)Take small portion and shape it into ball.

    9)Sooji laddu with condensed milk is ready.

      Expert Tips

      • Always keep an eye when roasting sooji, it may get burned sometime.
      • Roast sooji till aromatic. Once sooji is roasted, take it in a blender and powder to a fine powder.
      • You can add sugar as per your taste and sugar preference.
      • Instead of using milk to shape laddus, you can use more ghee.
      • Any dried fruits of choice can be used.
      • Don’t need to powder sooji too fine, little coarse is good.
      • Don’t add too much milk all at once. Add a tblspn at a time. If you add too much then the sugar will melt and the mixture will become liquidy.
      • Store this ladoo in an air tight container upto a week.

      Serving & Storage

      Rava laddu can be stored at room temperature for 2 days.You can store in fridge for longer. Enjoy rava laddu with a cup of Sulaimani tea or coffee.

      Equipment

      • Cooking pot
      • Blender

      Ingredients

      • 1 cup Rava | Sooji
      • ¾ cup Sugar
      • 2 piece Cardamom
      • 2 piece Cloves
      • 2 tbsp Cashews
      • 2 tbsp Golden Raisins (Kishmish)
      • 4 tbsp Ghee
      • 4 tbsp Milk

      Instructions

      • Start by roasting sooji in a dry pan on low flame till nice aroma comes from it..It will take about 4 to 5 mins. Transfer that to a plate to cool down. Now take that in a blender and powder it.
      • Take sugar in the same blender, add in cardamom and cloves into the sugar and powder them finely. Take powdered sugar and sooji in a bowl.
      • Now heat ghee in a small pan. Fry cashews and raisins till golden brown. Add this to the mixture. Mix well with your hands.
      • Now sprinkle small amount of milk over the mixture and keep mixing. The mixture will become little wet and crumbling. Don't add too much milk all at once. Add a tblspn at a time and mix well till the mixture resembles crumbly texture.
      • Once it reaches that stage. Take a small amount, press to form ladoos. Store these ladoos in an air tight container upto 1 week.
