I love brinjal recipes, i try different one each time, as a result i have posted so many brinjal recipes in this blog. This recipe is one of my recent try and it tasted delicious. There are so many ways you can make this dish, this is a easy method. Will share different variations soon.

Preparation Time : 10 mins
Cooking Time : 15 to 20 mins
Serves : 2 to 4
Brinjal - 4
Oil - 4 tblspn
Mustard Seeds / Kaduku - 1 tsp
Curry leaves a sprig
For Stuffing:
Coconut - ½ cup grated
Chilli Powder - 2 tsp
Coriander Powder / Malli Podi - 1 tblspn
Turmeric Powder / Manjal Podi - 1 tsp
Salt to taste
Jaggery - 1.5 tsp
Tamarind pulp - 2 tsp
Garlic - 2 cloves
Method:
Take the grinding ingredients in a blender and make it into a coarse puree.
Take the brinjal, slit them in the middle,open lightly, stuff the brinjal with this mix.
Heat oil in a pan, add in mustard and curry leaves. Saute them for a min.
Add in the brinjals, and toss well in the oil. Cover and simmer for 10 to 15 mins till the brinjal is cooked. Toss them often.
Serve.

add in chilli powder |
Add in coriander powder |
add in turmeric powder |
add in garlic |
add in some tamarind |
some salt and jaggery |
grind it to a coarse mix |
take this in a plate |
take your brinjal |
Use little small variety |
cut it like this |
Stuff this mix in |
Add brinjals stuffed |
Heat oil in a pan |
Add in little mustard seeds |
and some curry leaves..Let them splatter |
Add in the brinjal |
toss them in oil |
cover and cook on a low heat |
toss them now and then |
let them cook till brinjal is completely soft and done |
Serve |
