Wheat Bran Bread Recipe – Bran Bread Recipe

I never thought bran bread would turn out this beautiful. Loved the porous texture. I loved the chewiness of the bread, i feel really healthy when i eat this.

This bread was my experiment, i just measured my own ingredients and baked this. Just look at those texture, very porous and spongy like. Seeing the dough too sticky I thought this bread would be a disaster, but to my surprise it turned out to be perfection. Now this recipe is going to be in my repitore. Going to enjoy this for a few days.

This is so easy to make as well and it makes the perfect toast or taste just delicious when spread with some jam or preserves over it when sliced fresh from the loaf..

Preparation Time : 15 mins
Resting Time : 2 hours
Baking Time : 35 to 40 mins
Makes : 1 loaf


Ingredients:

Wheat Bran – 1.5 cup / 100 grams
Wheat Flour – 1.5 cup / 180 grams
All Purpose Flour / Maida – 2 cup + 1.5 cup / 420 grams
Dry Yeast – 2 tsp
Honey – 3 tbsp
Oil – 3 tbsp
Warm Water – 2 cups / 480 ml
Salt to taste


(My 1 cup measures 240 ml)

Method:

Take yeast in a bowl, add in 1/4 cup of warm water, add in honey and let it sit for 5 mins.

Now take wheat bran in a bowl, add in the remaining warm water and mix well. Let it sit for 5 mins.

Now add in oil, yeast water, wheat flour, 2 cups of maida and mix well. Give it a good mix. The dough will be very sticky. 

Now cover this with a plate and let it rest somewhere warm till it doubles in size, atleast 1 hour.

After it has risen, add in remaining 1.5 cup of flour and knead well. you can use a ladle and mix it very very well. This develops the gluten. The dough will be still sticky but little elastic.

Now oil a loaf pan really well, spoon the dough in it and smooth the top.

Now let it rest for 30 to 45 mins in a warm place.

During the last 10 mins of rising. Preheat oven to 200 degree C.

Now place the pan into the oven and bake for 15 mins in 200 degree C. After that reduce the temp to 180 degree C and bake for 20 to 25 mins further.

Now remove it and remove the loaf from pan.,let it cool on a wire rack.

Once it is cooled, slice and serve.

I used both all purpose flour and wheat flour
take yeast in a bowl
add 1/4 cup of warm water
add honey
let it activate
take wheat bran in a bowl
add remaining 1 3/4 cup of warm water
mix well and let it rest for 5 mins
add oil
add salt
mix well
add in yeast water
mix well
add in both the flour
mix well..the dough will be almost like a thick batter
now let it rise for 1 hour
this is how it looks
add in remaining flour
knead well, i used my ladle and gave a good mix
this activated the gluten
now spoon this into the pan and smooth the top
now it risen..bake till done
now it is baked

remove to a cooling rack and let it cool
slice and serve

    Hi Dear… Nice recipe… But can I jus use only wheat flour.. Or any other tweaks are required

    Thank you for the recipe. I made it today and I am so excited to share the results. It came out real cool. I halved the recipe as I was not sure I could make a good bread. I have tried many times and produced disasters only. I served some hot bread to my MIL and she loved it. Thank you sooooooooooo much for the recipe.

      Had left over whole wheat flour and bran in fridge. Found your recipe. Was great. Your instructions and descriptions were perfect. All was just as you said.

    Hi.. Sorry, I have no idea what t is wheat bran… Is wheat bra mn n wheat flour is two different flours????… N you using all purpose flour too…. So all 3 kinds of flour??? Please clarify… Tq

      yes wheat bran is the husk from wheat. it is available in amazon

    Hi. Just found this recipe. Did you use coarse or fine wheat bran? From the pic it looks like fine bran. Just want to make sure which type to use. Thanks
