Vegetarian Quesadillas

Vegetarian Quesadillas
This is a Mexican dish that is filled with cheese and other stuff..I made vegetarian style.But if you want to make in non vegetarian by adding a slice of ham or chicken and do exatly the same..If you have a grill pan you will lovely char lines in it..

 
Ingrediants:

Flour tortilla
Yellow Capsicum-1/2  chopped
Green capsicum-1/2  chopped
Mushroom-1/2 cup chopped
Sweet corn-1/4 cup
Salsa -1/2 cup
Cheddar cheese-1/2 cup grated
Coriander leaves -2 tblspn chopped
Salt to taste
Pepper to taste
Oil-1 tblspn

Method:

In a kadai add 1 tsp of oil and fry capsicum,mushroom,sweet corn for 2 min.Season with salt and pepper and set aside.

Take a tortilla and put the vegetable filling on one half of the tortilla.

Add a tsp of salsa on it..Sprinkle with cheese and sprinkle with some coriander leaves.

Fold it in half and brush with oil on both sides of the tortilla and place this in a heated grill pan or tawa and fry till the tortilla gets golden and crisp.

Cut into wedges and serve with salsa...

Grab your ingrediants

saute veggies and season with salt and pepper

Make quesadilla by adding sauted veggies,salsa,cheese,coriander leaves over tortilla..Fold it

Brush it with oil

Fry in a pan

till golden and crisp

Remove it and set on a chopping board

Cut it up

SERVE

  7. Yummy! I am still looking for a recipe to make for the lat day of the marathon and this might be it! I make it similar to your recipe without the salsa. Will try it with salsa next time I make them.
