Lemon Cake with Chocolate Butter Cream Icing |
Hai Friends...Hope you remember about the food stall that I shared with you in one of my post....Sorry for the late update,I want to share a few photos of that..We made delicious Brownies, Gobi 65, Spicked Chicken Skewers on behalf of our team...Rest of them made Some Fruit pizza, Spring rolls, Puddings, Some Fried sweets, Gulab Jamuns and some Indian Snacks...We really had a great time and all the stuffs that we made got over soon..Now back to today’s recipe..
I recently found that lemon and chocolate goes well together,so I discovered this cake and it was a huge blast..I made this cake for my sister’s friends birthday...I didn’t get a chance to look at the inside of the cake,since it is made for a birthday..I told my sister to take a picture of the cake after it has been cut,but she missed that..So sorry for that,but I can imagine how the cake will be after it has done its job “Lemon flavoured cake with creamy butter cream icing”...I made chocolate butter cream icing for this(you could check the recipe here)...So please try this cake and tell me how it came..

All Purpose Flour / Maida-2.5 cups / 300 gms
Eggs-4
Sugar-2 cups / 400 gms
Vegetable Oil-2/3 cup / 160 ml
Milk-2/3 cup / 160 ml
Vanilla-1 tsp
Salt a pinch
Baking powder-2 tsp
Baking soda-1 tsp
Lemon juice-1 tblspn
Yellow food colouring-a pinch(optional)
Chocolate Butter Cream Icing(click here for recipe)
Method:
Preheat the oven to 180°C ( 350°F).Prepare 2 round tin by applying oil in the bottom and dust it with flour and coat flour on all sides..Tip out the extra flour..
In a bowl add in flour,salt,baking powder,baking soda and mix well.
In a mixing bowl add in eggs,sugar and vanilla and beat till fluffy.
Add in lemon juice,oil,milk and mix well.
Sift in the flour mixture and fold gently till combined.
Add in yellow food colouring and mix well.
Tip this into two tin and bake it for 25-30 min.Let it cool down and remove it from the tin..
Leave it to cool completely before icing.
Prepare the Chocolate Butter Cream Icing (Check recipe by clicking this)...
Sandwich the cakes with a dollop of icing and cover the entire cake with the icing and decorate it as you wish..

Khush..Thanks for your comment..You could use any egg substitutes for this..Try adding some curd, apple sauce or silken tofu in this..I have never tried it, just a suggestion..Try it and let me know the result
