Aloo Methi Subzi / Methi Aloo / Fenugreek Potato Fry / Potatoes with Fenugreek Leaves - Rajasthani Style


I love cooking with potatoes because it takes only minimum time to make..And everyone in my house love it. My sisters love to have potatoes each and everyday and they won’t say no to it..Hmm.. And Kasuri methi is my favorite ingredient too, because it gives a awesome flavour to the dishes which we make..I use it so often in my recipes..


You can use fresh methi leaves in this recipe..But I couldn’t get my hands in it..so I used dried and I should tell you the flavour and taste didn’t vary that much..Actually speaking, if you are using fresh leaves you have to pay so much attention to them, like marinating them in salt and squeezing the water out of it to get the excess bitterness from it..Oh man I am not in that mood..Practically this is the easy way…I hope you will give it a shot..

This is my DAY 3 recipe for BM which falls in the theme Seven days of Rajasthani Recipes….Hope you like it and let me know what you think..

Ingrediants:

Potato – 3 large cubed
Onion -1 sliced
Kasuri Methi Leaves / Dried Fenugreek Leaves– 2 tblspn
Coriander Powder / Malli Podi – 1tblspn
Chilli powder – 1 tsp
Turmeric Powder / Manjal Podi -1 tsp
Amchoor powder – 2 tsp
Mustard Seeds / Kaduku – 1 tsp
Cumin Seeds / Jeerakam – 1tsp
Oil – 2 tblspn
Coriander Leaves / Cilantro for garnishing

Method:

Heat oil in a kadai.. Add mustard and cumin seeds and let it splatter.

Add onions and sauté till golden.Add in spice powders and sauté for a 30 sec.

Add in potatoes and sauté well. Add some salt and mix well.

Simmer the flame and cover the pan. Cook for 15-20 mins untill the potatoes are cooked.

Now add in dried kasuri methi leaves and mix well. Saute for 5 mins.

Add coriander leaves and mix well.

Serve hot with rice..

add some salt
cover and cook


untill the potatoes are half cooked
add methi leaves

and mix well
garnish with coriander leaves
and mix well
Serve
YUM RIGHT
Taste great with dal & rice

  11. This sounds amazing, but I think I am going to have some problems finding Fenugreek Leaves and Amchoor powder in rural France. I may have to do some substitutes. Diane

  23. looks good...and I appreciate knowing its Rajasthani...eventhough I know there are differences of regional Indian cuisine, I am still trying to learn those..I know Gujarati tends to be more sweet, etc.

  26. I absolutely love eating and cooking potatoes. My brother, who lives with me, is a huge fan of mashed potatoes to the point where my in-laws will DOUBLE the amount of mashed potatoes they are making for dinners so that my brother doesn't run out!
