I love making kuli paniyaram, specially because of their cute shapes. These bite size morsels are such a indulgence for breakfast. There is nothing more than making this during morning and having with coconut chutney.
This is the new paniyaram maker which i bought online for around 500 Rs. It is such a dream one, it is nonstick and i love it, because when i experiment with so many version of this paniyaram i dont have to worry about things getting stuck to the pan.
These paniyaram are made with oats and this is a instant version. It can be made any time as you wish. You can add whatever veggies you wish, i added some grated carrot which i love in this. This turned out to be so soft and fluffy and i loved it. Try it and you will know why i loved it...
Preparation Time : 10 mins
Cooking Time : 30 mins
Serves : 4 to 5
Ingredients:
Instant Oats - 3 cups
Rice Flour - 1 1/2 cups
Curd- 1 cup
Water as needed
Salt to taste
Eno Fruit Salt -2 tblspn
Oil for Frying paniyaram
For Seasoning:
Oil - 1 tblspn
Mustard Seeds / Kaduku - 1 tsp
Cumin Seeds / Jeerakam - 1 tsp
Urad dal / Ulundu - 1 tsp
Shallots / Sambar Onion - 10 chopped finely
Curry leaves - 10 chopped finely
Green Chilli - 2 chopped finely
Carrots - 1 cup grated
Coriander leaves / Cilantro - 3 tblspn finely chopped
Method:
Take oats, rice flour, curd and water in a mixing bowl and make a smooth batter.
Now make the seasoning by heating oil, and crackling mustard, cumin and urad dal and let it sizzle for a min.
Add in onions, curry leaves, green chilli and saute for a min.
Add in carrots and coriander leaves and mix well for 30 sec.
Now pour this over the oats mixture and mix well.
Add in salt and eno salt and mix well till they foam up.
Heat paniyaram pan, drizzle oil in it and let it heat up.
Pour spoonful of batter in the paniyaram pan and cook till the bottom crisp up.
Flip over and cook.
Serve with chutney.

| Pour ladleful of batter in |

On this kuzhipaniyaram, much liked aspect is the "eno salt"! Nice unique idea and usage, instead of some baking soda or yeast etc. Kudos & Cheers!!

Such a instant and super tempting healthy paniyaram,will make some soon.
U can pulse oats in mixer grinder for few secs n then add the rice flour. It will be even better
