When i was checking out my recipe index, i found that i haven’t posted much of kuzhi paniyaram recipes. Even though i make different kinds of it very often, because kuzhi paniyaram is my favourite

Similar Recipes,
Oats Kuzhi Paniyaram
Wheat Appam
Nei Appam

I use my non stick kuzhi paniyaram pan, it is my favourite. Because you can experiment with any of your own kuzhi paniyaram in this and it will make sure it comes off easily without sticking..This is my recent experiment and i loved it to the core..
Hope you will try this out and let me know how it turned out for you..
Preparation Time : 10 mins
Cooking Time : 2 to 3 mins per batch
Serves : 2

Ingredients:

Wheat Flour / Atta – 1 cup
Sooji / Bombay Rava – 1/2 cup
Curd / Unsour Yogurt – 1/2 cup
Water – 1 cup or as needed
Salt to taste
Eno Fruit Salt – 1 tsp (if using baking soda, use 1/2 tsp)
Oil as needed for frying paniyaram

For Seasoning:
Oil – 1 tsp
Mustard Seeds / Kaduku – 1 tsp
Cumin Seeds / Jeerakam – 1 tsp
Onions – 1 medium size chopped finely
Curry leaves  a sprig
Green Chillies – 1 chopped finely

Method:

Take wheat flour, sooji, curd, salt in a bowl. Add water slowly to make a little thick batter.

Heat oil in a pan, add in all the ingredients given for seasoning. Fry for a min.

Pour this over the batter and mix well.

Now add in eno fruit salt and mix well. It will get frothy now.

@Aarthy Biotecheno salt or baking soda gives the fluffy texture. If u omit it it will be dense
