Homemade Panch Phoron Spice Mix - A Bengali Five Spice Mix

I came across this spice mix few weeks back and i really want to give this a try. I thought of using this in few of my dishes and was very eager to check how this would turn out. I made myself a bottle of it and used in a couple of recipes, my goodness the results were amazing. They gave a very unique aroma and flavour to those dishes. I never imagined that this humble spice mix will give such a amazing flavour to those recipes.

I forgot to take pics of the spices invidually. 

So here is a picture of the spices which i found from google search. So if you are not so familiar with those spices you can check it out.

There are five amazing spice which goes in this mix.

1) Fennel Seeds  ( Very aromatic )
2)Mustard Seeds (Yellow one / Black One - You can use anyone )
3)Fenugreek Seeds (Very Bitter )
4)Kalonji ( Very nutty )
5) Cumin Seeds ( Very Earthy )

There is nothing much to do that shake these spices together in a airtight container and store them smuggly inside the cupboard. You wait for the couple of recipe post, they are amazing one.

Makes : approximately 1 cup


Mustard Seeds / Kaduku - 3 tblspn ( I used Yellow Mustard )
Fennel Seeds / Saunf / Sombu - 3 tblspn
Fenugreek Seeds / Methi Seeds / Vandayam - 3 tblspn
Nigella Seeds / Kalonji / Karum Jeerakam - 3 tblspn
Cumin Seeds / Whole Jeera / Jeerakam - 3 tblspn


Mix all them up and store them in a airtight container.

even I too start using this few weeks ago this mix will make a simple dish to flavorful and exotic ...i love it ,a small change i made in my mix ,I reduce the quantity of fenugreek from other ingredients ...
