Vegetarian Egg Thoran / Vegetarian Version of Scrambled Eggs

I am really excited to share this recipe with you all. Because this is one of the recipe which i have cooked more than anything else when i first started cooking, i think 5 years back. I used to type my recipes and take print out of them and save them in a translucent cover and file them together. Those recipes are like a treasure. I have almost forgot many recipes from them till last week. When i was looking at my old recipe collections and books, i saw the file which i made years back. I came across this recipe and remembered the beautiful stories behind them.

Immediately i tried it and took pictures to share it with you all. I call this as my vegetarian egg thoran because this does taste like egg. Believe me guys it really does...You can check out my recipe for the eggless french toast recipe. There is something with the gramflour which really taste like egg when cooked. You have to try it once to realize the taste of it. I hope you will give this a try and let me know what you think..

Preparation Time : 10 mins
Cooking Time : 25 to 30 mins
Serves - 4 to 5


For Gramflour Dosa:
Gram flour / Besan / Kadalai Mavu – 1 cup
Chilli Powder – 1/2 tsp
Coriander powder – 1 tsp
Pepper powder – 1/2 tsp
Garam masala powder – 1 tsp
Salt to taste
Oil – 1 tsp

For Masala:
Oil – 4 tblspn
Mustard Seeds / Kaduku – 1 tsp
Fennel Seeds / Saunf / Sombu – 1 tsp
Onion – 1 medium size chopped finely
Green Chilli – 1 finely chopped
Ginger Garlic Paste – 1 tblspn
Chilli Powder – 1/2 tsp
Coriander powder – 1 tsp
Pepper powder – 1/2 tsp
Garam masala powder – 1 tsp
Salt to taste


Mix everything given for gram flour dosa to a batter. The batter should be like dosa batter consistency.

Heat oil in a tawa and pour the dosa batter just like a dosa. Cook on one side for 3 to 4 mins and flip it over. Cook on other for 4 to 5 mins till it is completely cooked.

Remove them to a chopping board and finely chop them. Set this aside.

Heat 2 tblspn of oil in a kadai. Add in fennel seeds and mustard seeds.

Add in onions, green chilli and sauté for a while till it get translucent.

Add in ginger garlic paste and sauté for a min.

Now add in all the spice powders and salt. Mix this well.

Add in the chopped gram flour mixture and toss well with the masala.

Drizzle in the remaining 2 tblspn of oil and fry this for 5 to 10 mins.

Serve with rice and any gravy.

Take all your ingredients

Start by making the dosa

Add spices to gram flour

Add in salt

Mix in water to form a batter

Heat a tawa

Pour the batter like a dosa

Flip over and cook

Remove them to a board

Chop them finely

Now make masala, heat oil add in fennel & mustard

Add in onions and chilli

Saute for a while

Add in ginger garlic paste

Add in salt

Saute them

Now add in half of the spices

Saute them

Add in chopped pieces

Saute them well

Drizzle in some more oil

Fry them well

All done

  4. I made this for dinner tonight to go with leftover veggie curry and some sauteed mustard greens. My husband (he is Indian) said that dinner passed with flying colors. Thank you, I will be making this again! One question, mine didn't quite look like yours at the end, like yours looked softer. Maybe I cooked my pancakes for too long? Mine were quite thin.
