    Vegetable Quesadilla Recipe

    Vegetable quesadilla is a popular Mexican dish, it is made with tortilla and cheese. The filling option for quesadilla is so versatile that you can add any vegetable or meat of your choice. The tortilla is stuffed with fillings and cheese, then cooked on dosa tawa with oil. The outer layer of quesadilla will be crispy and the inner layer gets melted with cheese. 

    This vegetable quesadilla is a simple, delicious, healthy and filling recipe, which makes it perfect for breakfast, dinner, lunch or as an evening snack. Quesadilla can be enjoyed on its own or it can be served with guacamole, salsa or sour cream.

    Quesadilla is my favourite. It is cheesy and you make it with any ingredient which you have on hand. I have two variation of quesadilla in my blog, I will be sharing many more variations soon as well.This recipe is quite simple with veggies and guacamole.

    About Quesadilla

    Quesadilla is an authentic Mexican recipe made with tortilla, filled with vegetables or meat and cheese. Traditionally Mexican quesadillas are made with corn flour tortilla. The tortilla is filled with cheese and cooked on a griddle or in a dosa tawa. For this recipe, I have used my homemade wheat flour tortilla. Even if you don't have a tortilla, this recipe can be easily made using roti and paratha. 

    To make vegetable quesadilla, first saute the vegetable like onion, carrot, capsicum and season it with chilli flakes and oregano. Then take a whole wheat tortilla or corn tortilla, spread some guacamole on one side of the tortilla, fill it with prepared vegetables and add a generous amount of cheese. Fold with the other half of the tortilla, cook this on dosa tawa with some oil or butter. It should be cooked till the outer layer of tortilla turns crispy and melted cheese inside. 

    These quesadillas are perfect for busy days. I have made this vegetable quesadilla with carrot, capsicum and some guacamole spread. Quesadilla is an easily adaptable recipe that you can customize with your choice of vegetable or meat filling.     WHY THIS RECIPE WORKS 

    Easy to customize : The quesadilla recipe is so versatile that you customize the filling with the available ingredients in the kitchen. The filling adds the texture and taste to the quesadilla, which turns the simple tortilla or roti into a delicious and filling meal. 

    Balanced flavours : The vegetable quesadilla has balanced flavours and is also not too spicy. Carrot capsicum adds the crunchiness, where the oregano, chilli flakes add the aroma. It tastes absolutely delicious with the cheese and kids will love it. 

    WHY I LOVE THIS RECIPE 

    I tried quesadilla for the first time at an airport, while me and my husband were waiting for the connecting flight. The time was around 11 clock in the night, I was hungry and there was only limited food available. My husband is the one who insisted that I should try quesadilla, as it will be so light and filling.

    So, I ordered and to my surprise I got instantly hooked to the taste and texture of the quesadilla. It was so crispy on the outside and warm melted cheese filling on the inside. After that, I started making quesadilla at home with available ingredients and now it has become my family favorite. 

    Ingredients

    Wheat tortilla : I have made this recipe using my homemade whole wheat tortilla. The tortilla has a similar texture to roti. It will be so soft and easy to fold with the fillings. But you can also make quesadillas using corn tortillas, multigrain or millet tortillas.

    Oil : Oil is used for sauteing the vegetables and also added for tossing the tortilla. It makes the outer layer crispy. You can use any oil like canola oil, vegetable oil or olive oil. 

    Garlic : Finely chopped garlic adds a warm aroma and spicy flavour to the filling. 

    Vegetables : I have used a combination of onion, carrot and capsicum for the filling. All these are sliced thinly to add a crunchy texture. 

    Seasoning : For the seasoning, chilli flake and oregano is used. It provides the authentic Mexican herb and spice flavour to the recipe. 

    Cornflour or cornstarch : Corn flour is added to thicken and bind the filling together. 

    Tomato ketchup : Tomato ketchup gives a slight sweet and tangy taste. 

    Salt : Salt is used to balance and enhance the overall flavours. 

    Guacamole : Guacamole is a spread or dip made from mashed avocados, onion, chilli, garlic and lemon juice. It is a star ingredient in Mexican recipes. 

    Cheese slice : You can use any cheese like mozzarella, cheddar cheese. It can be in any form like cube, grated or slice. Cheese helps to hold the filling and tortilla together. 

    Step by Step Pictures

     
    Take all your ingredients
    You need some tortilla
    heat oil in a kadai
    add in some chopped garlic
    add in onion 
    sprinkle some salt and saute for few mins
    now it is light golden
    add in carrots
    saute for few mins
    add in capsicum
    toss well
    add in chilli flakes and oregano
    add some ketchup
    mix this well
    now take little cornflour
    mix it with some water
    pour this in vegetable mix
    mix well..now masala done
    take a tortilla
    now take some guacomole, which is optional
    spread it as thin layer
    spoon some veggies mix on one side
    fold it gently
    Add caption
    I did one with cheese
    take a slice of cheese
    place it over the veggies mix
    fold gently
    brush one side with some oil
    flip on hot tawa
    brush oil on other side
    cook till golden on both sides
    remove to a board
    cut into wedges
    serve
     

    Easy Tips for Perfect Quesadilla

    Ahead of time : Prepare the stuffing of your choice a day before and store in the refrigerator.

    Don't overfill : Don't stuff the tortilla with too many vegetables and cheese. It may ooze out during cooking. Fill a thin layer of prepared vegetable and cheese, it will be so easier to flip and cook. 

    Stack cooking : Instead of using a single tortilla, spread the tortilla with filling, cheese and spread. Stack it with another tortilla and cook. 

    Leftovers? The leftover filling can be used to make sandwiches, wrap and taco. 

    Expert Tips

    • Always cook on medium heat to prevent burning. 
    • The stuffing should not contain any moisture content, cook until it is dry. 
    • Add a spoon of mayonnaise for added flavour and taste.
    • You can even add hummus spread instead of guacamole.
    • To make it healthier, add vegetarian protein options like tofu, black beans, paneer. 

    STORAGE 

    Wrap the uncooked and cooked quesadillas using aluminium foil. Keep them inside the refrigerator and it stays good for 3 to 5 days. Reheat or cook them with little oil on dosa tawa or in the microwave oven. 

    SERVING 

    Serve hot and crispy vegetable quesadilla with guacamole, tomato salsa, sour cream or with tomato ketchup. 

    FAQ 

    Q.Can I use frozen tortillas ?

    Yes you can use frozen tortillas. Just make sure to thaw them as it softens the tortilla and will be easy to fold. 

    Q.Which cheese will work for quesadilla? 

    Any cheese that melts quick and easy will work for this recipe like mozzarella cheese, cheddar cheese or any processed cheese cubes. 

    Q.What to do if I don't have a tortilla? 

    You don't need to worry if you don't have any tortilla, this simple recipe even works with roti and paratha. 

    Q.What other can be used for filling ? 

    The filling option for quesadilla is endless. You can get creative with making quesadilla using mushroom, potato, paneer, tofu, spinach, beans, chicken or with beef. 

    Q.Can I bake / air fry the quesadilla ? 

    Yes you can. Preheat your oven or air fryer. Place the assembled quesadilla in the tray, brush some oil on top. Cook for 5 minutes. Flip and cook on each side in an interval of 2 minutes. It will be more crispier than pan frying.

    Chicken quesadilla : Chicken quesadilla is a delicious quesadilla recipe made with cooked and shredded chicken. The filling is flavoured with spices like oregano, chilli flakes. It is also one of the perfect grab and go protein rich meal options. 

    Spinach quesadilla : Mushroom quesadilla is also another delicious breakfast, lunch or dinner option and also perfect for kids lunch box recipe. It is made with sauteed mushrooms, garlic, onion and cheese.

    Equipment

    • cooking pan

    Ingredients

    • 4 piece Wheat Tortilla
    • 8 tablespoon Guacamole
    • 4 slices Cheese Slices

    For Filling

    • 1 teaspoon Oil
    • 2 cloves Garlic peeled & chopped finely
    • 1 medium Onion peeled & sliced thinly
    • 1 medium Carrot shredded
    • ½ medium Capsicum sliced thinly
    • 1 teaspoon Red Chilli Flakes
    • ½ teaspoon Dried Oregano
    • 1 teaspoon Cornstarch
    • 1 tablespoon Tomato Ketchup
    • Salt to taste

    Instructions

    • Heat oil in a pan, add in garlic and saute for 30 sec. Add in onions and salt. Saute for 2 mins.
    • Add in carrots and saute for 3 to 5 mins. Now add in capsicum and saute for 2 mins or so. Now add in ketchup and mix well. Add in oregano and chilli flakes.
    • Mix cornstarch with some water and pour it over the veggies mix. Toss well.
    • Take tortilla in a plate, spread some guacamole as thin layer. Now spread some veggies mix on one side of the tortilla.
    • Pace some cheese slice on top, cover with the other half of tortilla. Spread oil on one side of the tortilla.
    • Put tortilla on tawa, cook till golden on both sides.
    • Cut into wedges and serve.
