Eggless Fruit Cake Cupcakes Recipe


I can never have enough of muffins or cupcakes recipe. Each time i try different recipe and each time i keep on loving this. This is a fluffy and soft cupcake recipe.

Preparation Time : 10 mins
Baking Time : 20 to 25 mins
Makes: 6 to 8 cupcakes

Ingredients

Unsalted Butter - 1/4 cup (50 grams)
Brown Sugar - 1/2 cup (100 grams)
Vanilla Essence - 1 tsp
Orange Juice - 2 tblspn
Yogurt / Curd - 2 tblspn
All Purpose Flour / Maida - 1 cup (120 grams)
Baking Soda / Cooking Soda - 1/2 tsp
Baking Powder - 1/2 tsp
Cinnamon Powder - 1/2 tsp
Dried Fruits - 3/4 cup soaked (recipe here)

(My 1 cup measures 240 ml)

Method:

Preheat oven to 180 degree C. Prepare a muffin pan by lining it with cupcake wrappers and set aside.

Take butter, sugar and vanilla in a bowl and cream well.

Add in yogurt and orange juice and mix well.


Add in soaked dried fruits and mix well.

Add in flour, cinnamon, baking soda and baking powder and fold gently.

Use a icecream scoop to scoop the batter into the moulds.

Bake it for 20 to 25 mins. Insert a toothpick to check whether the cake is done or not.

Now remove it and cool completely.

Serve.

Start by soaking your dried fruits and nuts couple days before in wine, rum or brandy.

Take your muffin cases and grease them lightly with oil

take butter in a bowl

add brown sugar

add vanilla

cream well

add yogurt

cream well

squeeze in some orange juice

mix well

it may look curdled, but dont worry

add in the soaked dried fruits

mix well

add in flour

add in cinnamon

add in baking soda and baking powder

fold gently

use a icecream scoop to scoop out the batter

fill your muffin cases

Sprinkle top with more dried fruits, this is optional,
i found that the dried fruits like raisans burned a little on top

bake till done

Serve

  1. Hi Aarthi,in this recipe you have mentioned your one cup measures 240 ml but in the recipe you have mentioned for maida -1 cup as 120 ml.Can you please clarify.Thank you.
