Aloo Gobi Recipe / Dry Aloo Gobi Recipe / Aloo Gobi Fry Recipe – Side Dish for Rice

This is a simple and tasty dish, it is a dry kind of dish which goes beautiful with rice, even with rasam rice. There is no much preparation for this, just few spices tossed with these vegetable makes it so yummy. I have another version of this which goes nicely with roti, it is aloo gobi masala. Will share that soon.

I have a recipe for aloo channa and aloo bhindi in this blog, check that out too. And in this dish, i added few tomato piece in the end to give a nice fresh taste, the key is to keep the tomatoes whole. It makes a great presentation and gives a different taste..I hope you will try this out and let me know how it turned out for you..
Preparation Time : 10 mins
Cooking Time : 35 to 40 mins
Serves : 3 to 4

Ingredients:
Potatoes – 1 large peeled and cubed
Cauliflower – 3 cups florets cut into bite size pieces 
Oil – 2 tblspn
Cumin Seeds / Jeerakam – 1 tsp
Ginger Garlic Paste – 1 tblspn
Chilli Powder – 2 tsp
Turmeric Powder / Manjal Podi – 1 tsp
Garam Masala Powder – 1 tblspn
Salt to taste
Tomatoes – 1 large chopped

Method:
Heat oil in a kadai. Add cumin seeds and let them sizzle. Add in ginger garlic paste and saute for a min.
Add in potatoes and cauliflower and toss well in the oil.Cover it with a lid and cook it for 15 mins till it is completely cooked.
Add in salt and other spice powder and toss well.Cook it on high heat tossing often till it turns brown.
Add in tomatoes, toss once and turn off the heat, The heat will wilt the tomatoes a little. You don’t want  it to turn mushy.
Serve with rice.

Pictorial:
Heat oil in a kadai

once it pop add in ginger garlic paste

saute for a min

add in cauloflower and potatoes

toss well

cover and cook

cook till everything is cooked

Toss till they get some colour now..

Add in salt and spice powders

Toss well

Cook for few more mins, till vegetables
are nicely coloured

add in chopped tomatoes

toss once, turn off the heat, you want the
tomatoes to be chunky not mushy

serve

    I prepared this, awesome taste and easy to cook as well. Goes good with chapathi. I never added tomatoes at last in any of my cooking, I found out the seceret of adding tomatoes at last. Thank you so much aarthi.
