Baby Potato Poriyal Recipe – Baby Potato Roast Recipe

This is a quick and easy poriyal which is made using baby potatoes. It is fast to make and needs just a handful of ingredients. Taste great with rasam or sambar rice or anything. This dish can be done in under 20 mins or so. You can make this and have it on its own as well, it is that delicious.

This one is similar to my potato poriyal. But i wanted to share it because baby potatoes are super cute in a picture.

Preparation Time : 5 mins
Cooking Time : 20 mins
Serves: 3
 
Ingredients:

Baby Potatoes – 20 cooked and peeled

Salt to taste

Turmeric Powder / Manjal Podi – 1 tsp

Oil – 3 tblspn
Mustard Seeds / Kaduku – 1 tsp
Urad dal / Ulundu Paruppu – 1 tsp
Curry leaves – 2 sprig
Chilli Powder – 1 tsp

Method:
Cook baby potatoes in salted water till it is cooked, drain and peel off the skin. Set aside.
Heat oil in a kadai. Add in mustard seeds,urad dal and curry leaves. let them sizzle.
Add in potatoes, turmeric and salt and toss well. Cook till it gets roasted.
Add in chilli powder and mix well.
Serve.


Pictorial:

cook baby potatoes till it is done..add salt
while they are cooking
peel them and set aside
Heat oil in a pan
add mustard seeds and let them sizzle
add urad dal
add in curry leaves
add in cooked potatoes
toss well in the oil
add salt
add turmeric powder
spread them evenly and cook on medium heat till it crisp up
keep mixing often
now it is almost done
sprinkle chilli powder
mix well
Serve
