    Eggless Strawberry Muffins

    Its muffin time. yay. There is something more comforting in baking a muffins than anything else. Because muffins are less messy and can be made with few ingredients. Plus it taste yummy with a cup of chai or milk. Specially when you add fruits in them they turn into a great breakfast too.

    About Eggless Strawberry Muffins

    Strawberries are in season here, so I am buying them a lot because I adore this fruit and love cooking with them. So I want to add lots of recipes on my blog using them.

    I wanted to make this muffins eggless so I used my trusted egg substitute which is a banana, and called this muffin as strawberry banana muffins. Also I added some yogurt which makes this muffin lighter because it has wheat flour in it.

    Eggless Strawberry Muffins Ingredients

    Ripe Banana & curd - these two ingredients is used as egg alternative which provides the muffins moist texture.

    Sugar - the amount of sugar used in the muffin adds mild sweet texture.

    Oil - I used refined neutral oil for the muffins. You can use melted butter instead of oil.

    Vanilla Extract- pure vanilla enhance the taste of baked goods to a whole new level.

    Flour - this muffin recipe used half wheat flour and half plain flour perfect texture and taste.

    Leavening agent - baking soda and baking powder adds the lift which is needed in muffins.

    Strawberries - use strawberries in season for fresh taste. You can use frozen berries too.

    How to Make Eggless Strawberry Muffins (Stepwise Pictures)

    Take all your ingredients
    I used my non stick muffin tray
    brush them with oil
    Set aside till use..
    Take few strawberries
    chop them up..you will need 1 cup of chopped
    strawberries for this recipe
    Take half a large banana
    mash it roughly with a whisk
    Add in some oil..I used vegetable oil
    Add in sugar
    dash of vanilla
    whisk them well
    Now add in some curd
    beat that as well
    place a sifter over this
    add in wheat flour
    all purpose flour / maida
    baking powder
    and some baking soda
    sift it up
    once it is well sifted
    fold gently
    I added a tblspn of milk to this, because the batter was too thick
    mix well
    add in chopped strawberries
    mix well
    Use a icecream scoop
    grab some batter
    fill the tins
    I got 10 muffins
    Bake them
    so light and fluffy..

    Equipment

    • 12 cup muffin pan
    • Mixing Bowl, Whisk & Spatula
    • Ice cream scoop
    • paper liners

    Ingredients

    To Combine First

    • 1 medium Ripe Banana or half large banana
    • ½ cup Granulated White Sugar 100 grams
    • ¼ cup Oil I used vegetable oil
    • 1 tsp Vanilla Extract
    • ½ cup Unflavoured Plain Yogurt 120 ml

    Dry Ingredients

    • ½ cup Whole Wheat Flour 60 grams
    • ½ cup All Purpose Flour 60 grams
    • ½ tsp Baking Soda
    • ½ tsp Baking Powder

    Other Ingredients

    • 1 cup Strawberries chopped
    • 1 tbsp Milk optional

    Instructions

    • Preheat oven to 180 degree C | 360 degree F. Brush muffin tray with some oil and set aside. I used non stick muffin tray so I greased. You can line them with cupcake cases as well.
    • Now take banana in a bowl and mash it roughly with whisk or fork. Add in sugar, oil, curd, vanilla and beat well. Now Sift in flour, wheat flour, baking powder, baking soda and mix well. If your batter is too thick add a tbsp of milk to thin it slightly. Add in chopped strawberries and mix well.
    • Use an ice cream scoop and fill your muffin cases. Bake for 20 to 25 mins till it is cooked. Insert a tooth pick to check. If tooth pick comes clean, then the muffin is baked. Let it cool for 5 mins. Now remove them from the tin and serve warm.

      I tried your recipe, muffins were soft and spongy it came out good but only problem was I was getting atta smell from muffins. could you please let me know what would have happened so that I can correct it next time.

      @Sandhya G.Yes u can skip strawberry and keep it plain and simple. Or add any chopped fruits like mango, bananas or anything u like

      can i make in loaf shape if yes than what should be the size of loaf pan and how long should it take to bake?

      @meenakshiIt should be a 500 gram loaf pan and bake for 35 to 40 mins. check and bake as needed.

      I made these muffins today, they turned out so well. Really yummy to the tummy...

      But I forgot to add curds to it . And instead of vanilla essence I added custard powder of vanilla flavor...

      These muffins look great, i just cant wait to try it. I wanted to know if i can use dried strawberries, as they are a little hard shall i soak them in mik before i use them? Can i skip the banana? Ialso want to know if i can use full maida without atta? Waiting for ur reply....

      1) You can soak dried strawberries in hot water and use.

      2) If you want to skip banana, use egg.

      Hi aarti, I used ur receipe and it came out nice.Only thing was it was extra soft and not at all hard.i used brown sugar and normal sugar both.also i added lil more amt of milk.is this a reason? Brown sugar?
