    Delicious granola muffin which is not only delicious to make but taste amazing. This muffin is so easy to make and is absolutely perfect for breakfast.

    About Banana Granola Muffins Recipe

    A muffin is an individually portioned baked product, but the term can refer to one of two distinct items: a part-raised flatbread baked and then cooked on a griddle, or a quick bread chemically leavened and baked in a mould.

    Granola is commonly regarded as a healthy breakfast cereal. Its a toasted mixture of rolled oats, nuts, and a sweetener like sugar or honey, though other grains, puffed rice, dried fruit, seeds, spices, and nut butters can also be included.

    I love baking muffins more than anything else. Not only because it is easy to make, but it makes a great thing to have as morning breakfast. I am not a big morning person, but i like to enjoy a warm muffin in the morning along with a cup of tea, coffee or in my case a cup of green tea.

    Ingredients for Banana Granola Muffins Recipe 

    Ripe Banana 

    Ripe bananas are sweeter and taste better than unripe bananas. As the bananas ripen, the resistant starch in the bananas converts to simple sugar.

    Brown Sugar 

    Brown sugar is a sucrose sugar with a distinct brown colour from the presence of molasses. It is either an unrefined or partially refined soft sugar made up of sugar crystals with a residual molasses content, or it is made by adding molasses to refined white sugar.

    Ingredients
      

    • Ripe Banana - 1 large
    • Brown Sugar - ½ cup
    • Vanilla Extract - 1 tsp
    • Egg - 1
    • Granola / Muesli - 1.5 cups
    • Wheat Flour - ¼ cup
    • Baking powder - ½ tsp

    Instructions
     

    • Preheat oven to 180 degree C.
    • Line muffin pan with cupcake cases.
    • Take banana in a bowl and mash with a fork.
    • Add in egg, brown sugar, vanilla and mix well.
    • Add in flour and granola and baking powder and mix well.
    • Spoon this into muffin case and bake for 20 mins.
    • Remove and cool. Serve warm.
