    I love baking muffins more than anything else. Not only because it is easy to make, but it makes a great thing to have as morning breakfast. I am not a big morning person, but i like to enjoy a warm muffin in the morning along with a cup of tea, coffee or in my case a cup of green tea.

    Healthy and nutritious blueberry muffins which not only taste delicious but is perfect as breakfast or with a cup of coffee or tea. Did you know that blueberries is the number one popular fruits | berries which is used in making muffins.

    This blueberry muffins has so much flavour and taste so delicious. The blueberries  in them makes it so moist. This is made with basic Ingredients like flour, sugar, blueberry, milk, butter.

    There are some changes you can do to this recipe. You can skip all purpose flour and use wheat flour and use honey instead of sugar. Wheat flour makes this muffins more wholesome and still it will taste great. The one important thing you have to remember is not to over mix the batter. Over mixing muffin batter will result in denser muffins rather than lighter ones.

    Plain Flour - I used plain flour for making this muffin which provides lighter and soft texture. But you can use wheat flour when making muffins for a healthy alternative.

    Baking Powder - baking powder helps to make the muffin lighter and fluffier.

    Butter - always use the best quality unsalted butter for making muffins so you can control the salt level in the muffin.

    Sugar - Use either granulated or caster sugar for making muffins.

    Egg - I used egg in this muffin recipe. if you want egg alternative, refer my eggless strawberry muffins.

    Blueberries - use sweet blueberries for best flavour and taste in muffins. You can use fresh or frozen thawed blueberries.

    Milk - milk helps lighten the batter in consistency and texture.

    Success Tips for Perfect Muffin Top

    Achieving perfect muffin top is not rocket science. You need to do few adjustment in measurements also few baking techniques. Here are my tips for domed muffin top.

    1)Rest the batter - Make the batter as mentioned. Don't over mix the batter and also rest the batter for 15 mins before baking. This allow the starch molecules to absorb and swell create a thicker batter.

    2)Fill every other holes - While filling the batter in muffin pan, fill every other hole in muffin tray, this allows the muffins to rise better without disturbing the other muffins baking.

    3)Fill as much as you can - fill your muffin pan super full. use as much batter as you can to pack in the mould. I like to fill it upto the top.

    4)Increase Baking Powder - the amount of leavening agent you add in this should be slightly more than the regular recipes. Follow my measurements to the 'T'and you should be rewarded with the perfect muffins.

    Choosing Right Blueberries

    Blueberries are the star of the show. It is important to choose the best quality blueberries. Use sweet fresh blueberries for best flavour and taste in muffins. Blueberries have delicate skins and juicy flesh. If you add them in the beginning there are chances of it getting mushy. So add it in the end, and fold gently and bake.

    Fresh Blueberries - as always fresh blueberries are best. Specially when they are in season. Make sure you pick a bunch of fresh berries and make this amazing muffins.

    Frozen Blueberries - The next best thing to fresh berries is frozen. When fresh berries is not available, you can use frozen berries. Make sure you thaw the blueberry and use.

    Dried Blueberries - I have made muffins using dried blueberries. Even though they taste different but it is equally delicious. Check my lemon blueberry muffins.

    How to Make Blueberry Muffins (Stepwise Pictures)

    Cream Butter & Sugar

    1)Take soft unsalted butter in a bowl. Make sure the butter is soft and not melted. I left it little longer out so it started melting.

    2)Add in sugar. This is granulated sugar. But you can use caster sugar as well.

    3)Add a splash of good vanilla extract.

    4)Cream butter and sugar together till it is creamy and fluffy. You can use an electric beater or a whisk to cream butter and sugar.

    Adding Eggs

    5)Add in egg and combine it well with the butter and sugar.

    6)Once you mix the egg, the butter mixture may look slightly curdled. But that is okay.

    Adding Dry Ingredients

    7)Now add in the flour. I am using plain flour in this recipe, you can use wheat flour as well.

    8)Add in baking powder.

    9)Add a pinch of salt. Gently fold the mixture together.

    Making Muffin Batter

    10)Pour in little milk at a time and fold the mixture. Don't over mix the batter, just fold until it is just combined.

    11)The batter has to be slightly thicker in texture. This is your consistency you are looking for.

    Adding Blueberries

    12)Now take your blueberries. You have to rinse the blueberries and pat them dry completely.

    13)Add blueberries into the batter.

    14)Fold the blueberries into the batter gently with a spatula.

    Filling Muffin Moulds

    15)Line muffin tray with cupcake liners. Use an ice cream scoop to fill the muffin batter into the moulds. Ice cream scoops are great to fill muffin and cupcake tray.

    16)For perfect muffin top, you have to fill the batter right to the top of the tray.

    17)Top the muffin with few blueberries.

    18)Sprinkle some sugar on top for crispy texture.

    19)Place muffins tray into the oven and cook till it is baked.

    20)Serve warm muffins with a cup of milk.

    Expert Tips

    • Instead of plain flour, you can use whole wheat flour for healthier alternative.
    • Use soft unsalted butter for better texture. 
    • Fresh or frozen thawed blueberries can be used in the muffin batter.
    • You can sprinkle the top with demerara sugar for extra crunch. 
    • Don't over mix the batter, muffin batter shouldn't be over mixed. Else it will turn hard and dense. 

    Storage & Serving

    These blueberry muffins can be stored at room temperature for one day. You can keep them for 1 week in fridge and 3 months in freezer. For reheating, just warm them in microwave for few seconds or in a toaster oven for 5 minutes.

    You can enjoy blueberry muffins warm with a cup of milk.

    Equipment

    • Mixing Bowl, Whisk & Spatula
    • Ice cream scoop for filling muffins
    • Muffin Tray & Muffin Liners
    • OTG or Oven

    Ingredients

    • ¼ cup Unsalted Butter (50 grams)
    • ¾ cup Sugar (150 grams)
    • 1 tsp Vanilla Extract
    • 1 cup All Purpose Flour (120 grams)
    • 1 tsp Baking Powder
    • ⅛ tsp Salt
    • 1 no Egg
    • ½ cup Milk (120 ml)
    • 1 cup Blueberries
    • 1 tbsp Sugar for sprinkling

    Instructions

    • Preheat oven to 190 degree C. Line muffin tray with cupcake cases and set aside.
    • Take butter, sugar and vanilla in a bowl and cream together for 2 to 3 minutes till light and fluffy. Add in egg and mix well till combined using a whisk. Add in flour, baking powder, salt and fold gently. Pour milk and fold gently to adjust the consistency. Toss in blueberries and fold gently.
    • Scoop the batter into cupcake cases using an ice cream scoop. Sprinkle top with some sugar on top and bake for 25 to 30 mins. Remove and cool for 10 minutes in the tray. Serve warm.
