    Bhapa Doi Recipe - Steamed Yogurt Pudding Recipe

    Bhapa Doi, a delicious yogurt, condensed milk desert which is steamed..This desert is kind of pudding like, but without gelatin or chinagrass or agar agar..It is completely healthy and very cooling as well.

    This recipe is very new to me, this is the first time i tried it as well. I was fingers crossed because i have no idea how the pudding will set without anything. But when i made it and saw the dish i was quite happy and satisfied. It completely hit the spot.

    Preparation Time : 10 mins

    Cooking Time : 25 to 30 mins
    Makes : 4 to 6 small ramekins

    Ingredients:
    Hung Yogurt - 1 cup (Recipe here) yogurt has to be unsour
    Milk - 1 cup
    Sweetened Condensed Milk - 1 cup
    Cardamom Powder - ½ tsp
    Method:
    Mix all the ingredients well till creamy. Pour this into grease moulds or ceramic mould which is oven safe. Pour the mix in and cover the mouth with foil.
    Pop this in a steamer and steam for 20 to 30 mins depending on the size of the mould.
    Remove it and check using a knife to see whether it is cooked or not. 
    Now put this in fridge to set for couple of hours.
    Ease the side of the mould using a knife and unmould it carefully.
    Serve.

    Take some thick unsour yogurt in a sieve rested over a bowl..
    I put this set up in fridge overnight..

    Look how much whey has been collected..BTW this water is so nutitious, you can use this to knead chapati dough or add to rasam and gravies

    take hung yogurt in a bowl

    add some cardamom powder..I was too lazy to powder cardamom, so i added whole seeds from a cardamom..

    i transfered the mix to a jug

    Now take your moulds..it has to be oven safe

    i thought i will get three..but end up with only 2

    How to check whether it is cooked or not -
    Very simple Insert a kinfe to see, it will come clean..

      can I use thick curd instead of hung curd for the pudding?

      @Anonymoushung curd is best, since thick curd has water content in it. It will leave out lot of the water after its been steamed

      In the pressure cooker do we keep the weight and cook on med or high? Instead of curd can we use sour cream it is so thick.

      I have the small earthen pot ..can i steam that in cooker.. if so, for how many minutes?

      Tried this recipe using thick curd....it left so much water after cooking...
      Is it necessary that ingredients need to be in room temperature...I made it taking it directly out of the refrigerator
