Breakfast Burrito Recipe – Breakfast Burritos with Potato, Peppers & Eggs

Burrito is famous all over the world, it is nothing but a roll or wrap with has a heavy and generous stuffing of so many things which is wrapped inside a tortilla. Normally it has refried beans, guacomole, some kind of meat and a generous portion of cheese and pico de gallo.

This version is a simple breakfast recipe which has potato and eggs in them. Burritos is heavily stuffed wraps, even 1 wrap is pretty filling. I served this for lunch and we couldn’t even finish a single one. But it was delicious. I served it with a side of extra pico de gallo which we piled over every bite and its citrus tang was perfect..

This has become my favourite wrap, i have some more favourite wraps of mine here..Check that too..

Preparation Time : 5 mins
Cooking Time : 25 to 30 mins
Makes : 6 big burrito


Ingredients:

Oil – 2 tblspn
Garlic – 2 tblspn finely chopped
Onions – 1 medium size chopped 
Capsicum – 1 medium size chopped
Potato – 1 large peeled and cubed
Eggs – 6 to 8
Red Chilli Flakes to taste
Salt to taste
Cheese – 1 cup grated
Parsley / Coriander leaves as needed finely chopped
Tortilla – 4 to 6 (Recipe here)
Pico De Gallo as needed for topping (Recipe here)


Method:

Crack open eggs in a bowl, add in chilli flakes and salt. Mix well and set aside. If you want you can add some cheese into the egg mix.

Heat oil in a pan, add in garlic and saute for a min.

Add in onion, peppers and saute it till it gets nice colour.

Add in potatoes and toss and cook this till it gets golden. Add in red chilli flakes and salt. Cover and cook on a low heat for 15 mins.

Now add in eggs, cook it till it get cooked as per your liking.

Now take a tortilla and place it infront of you, spoon some of the egg potato filling, spoon some pico de gallo and wrap it well.

Cover with foil and serve warm.

Take all your ingredients
Crack open your eggs, you can add cheese into this, if you use..
Since my hubby doesn’t like cheese i didn’t add
now add some salt and chilli flakes
whisk till well combined
Heat oil in a kadai. Add in garlic
add in onions
saute for few sec
add in peppers
saute them
cook till it gets nice colour
add in potatoes
toss well
sprinkle little salt and chilli flakes
mix well
cook till well coloured
cover and cook on low heat till potatoes is tender
now potatoes are done
add in egg mix in
mix well
cook till eggs get scrambled
you can cook the eggs as per your liking
now it is done
sprinkle over some parsley
mix well
lay a tortilla in front of you..I used whole wheat tortilla
spoon a generous portion of the filling in
top with pico de gallo

fold from this end
now roll it tightly
fold from the other end too
now it is well wrapped
place it on a foil
wrap from this end
now cover it
fold again
this end you have to fold outwards..
So it will be easy for you to tear it and eat..
