    Chocolate chip ice cream is a creamy dessert that is loved by people of all ages. It is made with smooth and creamy milk, cocoa powder, sugar, vanilla, CMC, GMS, cornflour and filled with chocolate chips. The tiny bites of chocolate chips makes every spoon fun, tasty and crunchy. This homemade chocolate chip ice cream is perfect to enjoy on its own or serve in a bowl with butterscotch sauce, chocolate sauce, hot fudge sauce or pair it with cone and brownies. lovers.

    I wanted to try a proper ice cream recipe which we get in stores. Finally got this recipe for my aunty and it turned out to be so creamy, just like the one which you get in stores.

    The main ingredient which makes this ice cream creamy is gms and cmc which you can get in shops which sells bakery supplies or look online. I have already shared a vanilla ice cream recipe and this is my chocolate take on it.

    About Chocolate Chip Ice Cream

    Ice cream is one of the most loved desserts in the world. It is creamy, chocolatey and instantly brightens your mood. Just one scoop after a meal feels like a celebration, doesn't it ? And the best part is you don't need any fancy ice cream maker machines to make it at home. 

    Chocolate chip ice cream is made with milk, cocoa powder, chocolate chips, CMC, GMS and corn flour. It is rich, smooth and full of real chocolate flavour. The cocoa powder gives that deep chocolate taste and the chocolate chips add a little bite of happiness in every spoon. Ingredients like CMC, GMS helps to make the ice cream a smooth, scoopable texture just like store bought tubs.

    This is one of the best chocolate ice cream recipes that is so smooth, rich and deeply chocolatey in every scoop that lives truly up to its name.     Ingredients

    Full fat milk : This is the base of the ice cream. The fat in the milk helps to make a rich and creamy ice cream. So, it's best to use full fat milk. 

    Sugar : Sugar adds sweetness and balances the slight bitterness of the cocoa powder. 

    CMC : CMC is known as Carboxymethyl Cellulose is a stabilizer that helps the ice cream to stay soft, smooth and prevent it from crystallizing. 

    GMS : GMS is known as Glycerol Monostearate, an emulsifier that gives the ice cream that smooth and creamy texture like store bought ones. For substitute, use fresh cream or egg yolk. 

    Corn starch : Cornflour helps to thicken the base of the ice cream. For substitute, use custard powder. 

    Cocoa powder : Cocoa powder gives the ice cream its signature rich, deep chocolate flavour and color. Use good quality unsweetened cocoa powder for intense flavour. You can also add some melted chocolate for richness. 

    Vanilla extract : Vanilla extract enhances the chocolate flavour and adds a warm, pleasant aroma. 

    Chocolate chips : Chocolate chips add texture and little bursts of chocolate flavour in every bite. You can also add chocolate chunks, chocolate shavings or brownie pieces. 

    Expert Tips

    • Don't boil the milk, just heat the milk until it just starts to simmer. Boiling can change the texture and flavour.
    • Add some fresh cream for extra richness. 
    • If you don't have the stabilizer like CMC GMS, then whisk or beat the ice cream once or twice while freezing to reduce iciness. 
    • Strain the base through a sieve before freezing to get a silky smooth ice cream. 
    • Add chopped brownies, nuts, cookie pieces or chocolate chunks for added texture and taste. 

    Storage & Serving

    Store the chocolate chip ice cream in an airtight container, cover with plastic wrap and seal it well. It will stay best for 1 to 2 months in the freezer. 

    Serve the ice cream in a bowl or cones with chocolate sauce, chocolate syrup or with brownie and nuts topping. 


    Step by Step Pictures

    1)Take Cornstarch, cocoa powder, CMS, GMC in a bowl.

    2)Add milk slowly and mix to form a smooth mixture.

    3)Take sugar in a sauce pan.

    4)Pour in milk.

    5)Place on heat and bring it to a boil.

    6)Once it starts to boil, add in the mixed cocoa mix.

    7)Whisk it really well. Place on heat and cook until it thickens slightly.

    8)Now stir in vanilla extract.

    9)Remove to a shallow container and allow it to cool.

    10)Place into the freezer and freeze until solid.

    11)Take the mixture in a blender.

    12)Blend for 2 to 3 minutes until smooth and creamy.

    13)Pour back in the same container and freeze for 3 to 4 hours.

    14)Now repeat this blending process one more time. This makes the ice cream extra creamy. Once the second blending is done. Add in chocolate chips.

    15)Stir well and freeze.

    16)Scoop and serve.

    17)So creamy ice cream is ready.

    18)Enjoy.


    FAQ 

    Q. What is CMC ? 

    CMC is known as carboxymethyl cellulose is a stabilizer and thickening agent used in ice cream recipes to have a smooth texture and prevent the ice cream from crystallizing . 

    Q. What is GMS ? 

    GMS is known as Glycerol monostearate is an emulsifier that helps blend fast and water in the ice cream base so it creates a smooth, rich and creamy base. 

    Q. Do I need an ice cream maker ? 

    No, this recipe doesn't require an ice cream maker. You just whip using an electric beater and freeze it until firm.

    Q. Can I add other nuts or flavours ? 

    Yes, you can add chopped nuts like cashew, almond, crushed cookies, or make a swirl using chocolate or caramel sauce. But make sure to add them after the final freezing step. 

    Q. How long should it freeze before eating ? 

    It should be freezed at least 8 to 12 hours or until it is firm. So, it becomes scoopable and delicious.

    Ingredients
      

    • 500 ml Full Fat Milk
    • ¾ cup Sugar
    • ¼ teaspoon CMC
    • 1½ tablespoon GMS
    • 1½ tablespoon Corn starch
    • ½ cup Cocoa Powder
    • 1 tablespoon Vanilla Extract
    • 1 cup Chocolate Chips

    Instructions
     

    • Take cms, gms, cocoa, corn starch in a bowl and add 1 cup milk to it and make it into a smooth paste. Set aside.
    • Take remaining milk and sugar in a sauce pan and bring it to a boil. Now simmer this for 5 mins. Now add in the mixed cocoa mix in this and keep mixing. It will thicken immediately. Now boil this for 1 or 2 min.
    • Now pour this in a bowl and add in vanilla and mix well. Now cool this down and pour it in a shallow freezer safe container and freeze for 3 to 4 hours.
    • Now take it out and use a electric beater or a blender and blend this for 5 to 6 mins till the mix gets light and frothy.
    • Now pour it in a shallow freezer safe container and freeze for 3 to 4 hours. Repeat the same thing one more time as well.
    • Now add in chocolate chips and mix well. Now freeze overnight. Now for serving, scoop the ice cream in a bowl and serve immediately.
