    Sandwich uthappam, also called a no-bread sandwich, is a quick and easy recipe made with simple ingredients. It is soft, filling and perfect for breakfast, dinner or even as an evening snack. You can enjoy it with tomato ketchup, green chutney, coconut chutney or even with podi.

    This is one of the simplest recipe you can ever make. It is plain uthappam but taste so delicious with the pav bhaji masala and coriander leaves sprinkled over it. Taste great with green chutney.

    If you are looking to make your usual menu a little more exciting, this uthappam sandwich is definitely worth trying. It was a big hit at home and quickly became a favorite. 

    About Sandwich Uthappam

    At our home, when we make dosa batter, the first few days the batter is used for making regular idli and dosa. After that, when the batter turns a little sour, we use it to make uthappam or kuzhi paniyaram. That mildly sour batter gives a soft, spongy uthappam everytime. 

    Sandwich uthappam is a fun and kid friendly twist on the classic South Indian breakfast. Instead of the usual plain or topped uthappam, this version is made like a sandwich with a tasty, crunchy filling inside. It makes the meal more interesting and satisfying. 

    One evening at dinner, my husband decided to try something different from the usual. He poured thick uthappam batter on the pan, added a simple topping like onion, tomato, capsicum and finished with Italian seasoning and cheese. The kids absolutely loved that cheesy uthappam sandwich.

    That idea inspired me to try a few more variations at home. In this recipe, I spread some green chutney, pav bhaji masala along with vegetables to make a delicious desi style sandwich. It turned out really tasty and felt like a nice change from regular uthappam.

    I've also shared another version called sandwich masala uthappam which is inspired by the classic South Indian masala dosa. Both these versions are very easy to make and bring a fun twist to everyday recipes. 

    Ingredients

    • Dosa batter : Dosa batter is the main base of the recipe. Use slightly sour and thick batter for making uthappam. For a healthier version, you can swap with homemade millet dosa batter. 
    • Butter : Butter is added for its rich taste and flavour. It helps to cook the uthappam until it is soft and golden. 
    • Onion : Onion adds a mild crunch and slight sweet taste when cooked. It makes the sandwich more flavourful. 
    • Tomato : Tomato adds juicy taste and a mild tangy flavour. It balances the overall flavours and keeps the filling tasty. 
    • Capsicum : Capsicum as like the onion adds a mild crunch and a fresh flavour. You can also add tri color capsicum to make it colorful and vibrant. 
    • Pav bhaji masala or Garam masala : I have used pav bhaji masala to add aroma and flavour to the filling. It gives the classic street style sandwich taste and makes it more delicious. You can also swap with garam masala for the aroma. 
    • Green chutney : Green chutney used as a spread to make the sandwich mild spicy and adds fresh taste to the filling. It balances the overall flavor and gives a desi sandwich taste in uthappam. 

    Step by Step Pictures

    Make green chutney

    1)You can follow this recipe for making green chutney.

    2)Take some dosa batter for making uthappam.

    3)Heat a tawa, pour a ladleful of batter.

    3)Apple some butter and green chutney.

    4)Spread evenly so the butter and green chutney on top of the dosa.

    5)Top with onions, tomatoes, capsicum on top of the dosa.

    6)Sprinkle top with some pav bhaji masala.

    7)Drizzle some dosa batter on top.

    8)Cover the dosa with dosa batter. top with some more butter.

    9)Flip over and cook.

    10)Cook both sides till golden brown.

    11)Serve.


    Expert Tips

    • Make sure the batter is thick and slightly sour. This helps the uthappam hold its shape well and prevents it from breaking while placing the filling. 
    • Always cook on medium flame so the uthappam cooks evenly inside and crispy outside without burning. 
    • After adding the filling, slightly press it using spatula. This helps the toppings stick to the uthappam base properly. 
    • Don't overload with stuffing, otherwise it becomes difficult to flip.

    Serving

    Sandwich uthappam tastes best when served fresh and hot straight from the tawa. Serve it alongside with green chutney, coconut chutney, tomato ketchup or podi. For extra taste, spread a little butter and chutney just before serving.

    FAQ 

    Q. Can I use fresh batter instead of fermented batter ? 

    Yes, you can use fresh batter. However, the slightly sour batter is always best for making uthappam. It helps to get the soft, spongy texture. 

    Q. Can I add vegetables to the filling ? 

    Of course ! You can customize the filling with your favorite vegetables like potato, carrot, paneer, or even with chicken. Adding these vegetables make the uthappam more nutritious, filling and flavourful. 

    Q. Why is my uthappam breaking while flipping ?

    This usually happens if the batter is too thin or the filling is added too early. To avoid this, add the filling only after the base is partially cooked and gently press the filling so it sticks well before flipping.

    Dosa Pan

    Ingredients
      

    • 2 cups Dosa Batter
    • 2 tablespoon Butter
    • 1 medium Onion peeled and chopped finely
    • 1 medium Tomato chopped finely
    • 1 medium Capsicum chopped finely
    • 2 tablespoon Pav Bhaji Masala
    • 4 tablespoon Green Chutney

    Instructions
     

    • Heat a tawa. Spread dosa batter over it, spread it evenly.
    • Add some butter and green chutney. Spread it over.
    • Sprinkle onions, tomatoes, capsicum, pav bhaji masala over it .
    • Spoon some more dosa batter over it and spread it. Cook till bottom crisp up.
    • Dollop some butter over it, flip over and cook till the bottom is done. Cook on low heat.
    • Remove and spread some butter.
    • Cut into wedges and serve.
