Chorafali recipe, also known as Cholafali is a popular Gujarati snack made with gram flour, urad dal flour, baking soda and water. These snack when rolled and fried puffs up and gets a crispy yet hollow texture in the middle.

This is a very new snack for me. When I was hunting for Diwali recipes. I came across this one and it immediately caught my eyes. I made it at once and it was a hit. This one is pretty easy to make, but it taste really delicious.
It is all fluffy and crispy. A different experience when you taste it. Try this unique snack from Gujarat this Diwali and hope you will enjoy it.
About Chorafali (Cholafali)
Chorafali is a traditional snack from Gujarat. It is popularly made during the festival of Diwali to share with family and guests. The word "Chorafali" is loosely translated to crispy flakes or strips.
Cholafali is a crispy, airy crispy snack which has a hollow texture in the middle. Traditionally made along side with Gujarati farsan.
What makes it so special is the unique texture. The snack is crisp outside and airy inside. It has a hollow texture in the centre. And this snack is mainly made only during Diwali festival which makes it even more special.
It is sprinkled with special masala of amchoor powder, chilli powder and salt. Instead of this, you can use peri-peri or chat masala.

The combination of gram flour and urad dal flour is what makes this snack puff up. Specially urad dal helps with the texture. If you prefer you can add spice powders like chilli powder when making the dough.
Once fried, cooled and stored in an air tight container, chorafali stays fresh upto a week. Enjoy with a cup of tea or coffee.

What Makes Chorafali Special
- Flour combination - made using gram flour (besan) and urad dal flour. The dough is rolled with wheat flour which makes it puff.
- Texture - gram flour, urad flour, salt, oil, baking soda is kneaded to dough. Rolled to make puffed layers when fried.
- Special masala - after frying, the snack is sprinkled with red chilli powder, amchoor powder, and salt.

Chorafali Ingredients
- Flour Mix - there are 2 types of flour used for making the dough. Gram flour is the main ingredient and urad dal flour is added which helps the snack puff when fried.
- Baking Soda - a pinch of baking soda helps puff up the chorafali.
- Oil - I used sunflower oil for deep frying.
- Spice Powders - a combo of red chilli powder, salt, amchoor powder is mixed and sprinkled once the snack is fried.

Step by Step Pictures
Warming Water
1)Take water in a sauce pan. Add in oil and mix well. Now place it on heat and warm it slightly. Don't let it boil.

2)Set aside.

Make Dough
3)Take gram flour (besan) in a bowl. if your besan is lumpy, you can sieve it.

4)Add in urad dal flour in the same bowl.

5)Add in a pinch of baking soda.

6)Add in salt and mix well.

7)Now mix this really well until all ingredients is mixed completely.

8)Now pour the warm water over the flour and mix well.

9)Knead to a soft yet stiff dough. Cover and let it rest for 20 to 30 minutes.

Rolling & Cutting
10)Take a portion of dough. Dust it with some wheat flour. Take it on a rolling pin.

11)Roll the dough into thin sheet like.

12)Now cut into strips like this. Don't make it too thick.

13)Cut in half since the strips is so long.

Frying Chorafali
14)Heat oil for deep frying, drop the chorafali in hot oil and let them puff up.

15)Once they get puffed, flip over and cook. it wont take much time at all. Just few seconds.

16)Strain the snack onto some paper towel. Let it strain.

17)Look how puffy the snack looks.

Seasoning
18)Take red chilli powder, salt, amchoor powder in a bowl.

19)Mix it well, this is your seasoning for the chorafali.

20)Sprinkle this powder all over the fried chorafali while it is still hot.

21)Let it cool, then store in an air tight container.

Ingredients
- 1¼ cup Besan (Gram Flour)
- ⅓ cup Urad Dal Flour
- 1 teaspoon Salt to taste
- ⅛ teaspoon Baking Soda
- ¼ cup Wheat flour (for dusting and rolling dough)
For Warm Water (Wet Ingredients)
- 2 tablespoon Sunflower Oil
- ½ cup Warm water as needed
For Spice Powder (Seasoning Mix)
- 1 teaspoon Red Chilli Powder
- 1 teaspoon Black Salt
- 1 teaspoon Amchoor Powder (Dry Mango Powder)
Instructions
- Take water and oil in a sauce pan and heat it till it gets warm.
- Take gram flour, urad dal flour, salt, baking soda in a bowl. Pour the warm water over the flour and knead well till a smooth dough is formed. Cover and Set aside for 10 mins.
- Take a portion of dough on a work surface. Dust generously with wheat flour and roll it thin. Cut it into strips and then cut that in half.
- Heat oil for deep frying. Once hot, drop in the strips in hot oil. It will puff up. Flip over and fry on other side too. Fry till crispy and strain it on some paper towel.
- Mix red chilli powder, amchoor, black salt in a bowl. This is your seasoning mix. Sprinkle with spice powder mix over fried chorafali. once cooled, store in an air tight container.

Hi aarti how r u..I have some questions....Will we do this in sweet version..?Wat u add is black urad dall or white.?ShallI add the spice mix directly into the dough?Will I skip aamchur powder...
