Love this spongy cake so much..

Now coming back to todays recipe, it is a steamed lentil cake called as dhokla. I have been waiting to post this recipe, because it is one of my favorite..I love to have it with green chutney and tamarind chutney. I have made a version of green chutney here to serve it with this. I have posted that recipe too..

I recommend you to have this with any of those chutney, because they do pack a punch..So try it out and let me know how they turn out..



Preparation Time : 15 to 20 mins
Cooking Time : 15 to 20 mins


Ingredients:


For Dhokla:
Gram Flour / Besan / Kadalai Mavu – 1.5 cup 
Sooji / Rava / Semolina – 1.5 tblspn
Curd – 1 cup
Water – 1/4 to 1/2 cup
Salt to taste
Sugar – 1 tblspn
Turmeric Powder / Manjal Podi – 1 tsp
Lemon Juice – 1 tblspn
Eno Fruit Salt – 1 1/2 tsp
 

For Grinding:
Ginger – 1 tblspn 
Green Chilli – 3
Water – 2 tblspn

For Tempering:
Oil – 3 tblspn
Mustard Seeds / Kaduku – 1 tsp
Green Chilli – 1 finely chopped
Asafoetida / Hing / Kaya Podi – 1/4 tsp
Water – 4 tblspn

For Topping:
Coriander Leaves / Cilantro – 3 tblspn finely chopped
Coconut – 3 tblspn Grated

For Green Chutney:
Coriander leaves / Cilantro – 1 cup
Mint Leaves – 1 cup
Green Chilli – 2 to 3
Sugar – 1 tsp
Salt to taste
Lemon Juice – 1 tblspn
Water – as needed to blend

Method:

Take green chilli and ginger in a mixer. Add 2 tblspn of water and puree them to a smooth paste. Set aside till use.

Now take a steaming high sided plate and grease it well with oil. Set aside till use. 

Now pour water in idli stand or a kadai. Bring it to boil. This is where you are going to steam your dhokla.

Take curd and water in a large mixing bowl. Add in salt, sugar and turmeric powder. Mix them together.

Now add in gram flour, sooji and make into a smooth batter. Leave it to sit for 10 mins.

After 10 mins, add in pureed ginger and chillies, lemon juice and mix them well. 

Now just before you steam, add in the eno fruit salt and mix, mix, and mix.

Pour it immediately in the grease tray and pop into the steamer.

Steam it for 15 to 20 mins or till a tooth pick inserted comes out clean.

When the dhokla is steaming, make the green chutney. Take all ingredients in a blender and make into a smooth paste. Your green chutney is done. Set aside till serving.

Now After 20 mins remove the dhokla from the steamer and set aside. Now make the tempering, heat oil in a tadka pan, add in mustard, green chilli, asafoetida and let them sizzle for a min. Take it off the stove and Pour in water and mix them well.

Now drizzle this all over the dhokla, top it with coriander leaves and coconut.

Slice and Serve with green chutney.

Take all your ingredients

Ingredients for tempering and toping
Take ginger and green chilli in a blende

Add some water

Puree them
Grease a steaming tray with oil

Heat water in s steaming pot
Take curd in a bowl

Add water

Add in salt, sugar and turmeric powder

Add in gram flour

Mix them well

Add some rava / sooji

add the pureed ginger and chilli

squeeze in some lemon juice

mix that well

now add in the eno fruit salt

Mix, Mix, Mix

All foamed up

Pour it in the tray

All done
Pop them in the steamer

Cover and cook

When it is cooking, make the green chutney,
Take coriander leaves,mint leaves chilli, salt, sugar and
lemon juice in a mixer

Blend them
Green Chutney done

Now the dhokla is baked

Lets make the tempering

Add in mustard seeds and chillies

Add a touch of asafoetida

fry them well

pour in some water

Pour this over the dhokla

Done Done

Sprinkle over some coconut

And some coriander leaves

Dhokla Done

Serve

I love this with green chutney

    Hi Aarthi, its am amazing snack. My most favorite too. Though being a gujarati, I must say that the recipe you gave here is called "KHAMAN".
    Dhokla is made with rice n chana dal mix. But everyone says both names together, but both are different m taste too…!! I hope you won't mind correcting.

    Hi
    I tried this ..my batter of dhokla was correct ..all it was i found steaming problem…..steam was getting cnvrted into vapours..and vapours water was pouring on dhokla inside…ultimately it coudnt raised..
    Please solve my query.

    @Batul Abbas You must havee over steamed it so it has got dry, o you must have use less curd or water than mentioned.

    It turned red in colour. Had to discard. but i tried to make it in microwave. Dont knw what went wrong. I guess haldi lime baking soda Combo might b the culprit. What went wrong?

    Hi, i got to knw the culprit. I think i added too much of baking soda thus it turned red. I guess i should buy eno on safer side and try this recipe again.

    Hi Aarthi..I followed the exact steps and made it in rice cooker..It came out really well and was a surprise for my hubby as he usually buys dhokla from outside..Thanks for the recipe.
