    Cranberry sauce bread is a quick and tasty bread made without yeast or doesn't need any long rising time. It is made with simple ingredients like flour, sugar, oil, egg and homemade cranberry sauce. Instead of letting the sauce sit in the fridge, turn that into a soft and flavourful bread to have any time.

    When you have lots of cranberry sauce leftover from Thanksgiving or if you want to make a quick breakfast then this recipe is a winner. It is so yummy and so delicious. The bread almost tastes like a fruit cake.

    About Cranberry Sauce Bread

    Cranberry sauce is a condiment which is made and served during Thanksgiving and Christmas. It is served with roast turkey. The sauce is thick, jam like which has a light spice note to it. The sauce is tart, sweet in taste.

    Cranberry sauce bread is a moist and delicious loaf filled with sweet tart flavours of cranberry sauce that makes every slice special. This recipe is an easy idea to turn your leftover cranberry sauce into something unexpectedly comforting and tasty. 

    This cranberry sauce bread was my experiment with my homemade cranberry sauce and it turned out soft, moist and spongy. It is really simple to make with basic ingredients like flour, oil, egg, sugar, cinnamon powder and vanilla extract.

    The combination of oil and egg in the batter helps to create a soft and tender loaf. While the chunky cranberries throughout add a nice pop of color and taste to the loaf. 

    The tartness of cranberries gives a lovely contrast to the sweet bread, making it perfect for holidays, cozy breakfast and special occasions.

    The bread tastes amazing when served warm with little butter or any spread for an evening snack with a cup of tea. 


    Ingredients

    All Purpose Flour: Flour is the base for making bread. It provides the structure and creates a soft, tender crumb bread when baked. For healthy options, swap with whole wheat flour or gluten free flour.

    Baking soda : This is the leavening agent that makes the bread rise and fluffy. It reacts with acidity in the cranberry sauce to create a light and airy texture. 

    Cinnamon powder : Cinnamon adds a warm aroma and makes the bread flavourful. 

    Sugar : Sugar is added for its sweetness and keeps the bread moist. You can alternate with brown sugar, coconut sugar or maple syrup. Adjust the quantity according to your preference. 

    Cranberry sauce : This is the star ingredient that has a sweet tart taste with a fruity punch. It provides flavour, moisture and color to the bread. I have used my homemade cranberry sauce. You can also use store bought ones. 

    Oil : Oil keeps the bread moist for long. Use any neutral flavoured oil like canola oil, vegetable or sunflower oil. 

    Egg : Egg helps to create a soft textured bread and also helps it to rise nicely. Substitute with yogurt, banana or flaxseed egg. 

    Vanilla extract : Vanilla enhances and balances the flavour of cranberry. 


    Step by Step Pictures

    1)take plain flour, ground cinnamon, salt and baking soda in a bowl.

    2)Mix this really well using a whisk.

    3)Take cranberry sauce, sugar in a bowl. I used my homemade dried cranberry sauce.

    4)Pour in oil and mix well.

    5)Add in one egg.

    6)Add a splash of vanilla extract.

    7)Whisk this until it is combined.

    8)Add in the mixed plain flour.

    9)Fold gently until it forms a thick and smooth batter.

    10)Spoon the batter in a parchment lined loaf pan.

    11)Bake until it is cooked. Remove from oven and allow it to cool completely.

    12)Slice and serve.


    Expert Tips

    • You can use canned or store bought cranberry sauce. 
    • Add chopped nuts like walnuts, almonds or chocolate chips for extra nutty texture. 
    • Add chopped dried cranberries for extra chewiness.
    • Drizzle with chocolate or vanilla icing glaze or top it with cream cheese frosting. 
    • If using canned cranberry sauce, check if it is watery. If, then drain some liquid before adding to the batter. Too much liquid can make the loaf soggy. 
    • If you are adding whole or frozen berries, toss them in a little flour, so they stay still instead of sinking to the bottom of the pan. 
    • Let the bread rest for a while before slicing. 

    Storage & Serving

    Store the sliced cranberry bread in an airtight container. It stays good at room temperature for 2 to 3 days. Keep them covered using cling wrap when freezing. 

    Serve the cranberry sauce slightly toasted for evening tea time. Or spread some butter, cream cheese, and nutella for extra flavour. 


    FAQ 

    Q. Can I use canned cranberry sauce ? 

    Yes. Both canned and homemade cranberry sauce work well.

    Q. Does the bread taste tart ? 

    It is lightly sweet with tangy flavours of cranberry . The tartness in the berry is beautifully balanced by the sugar. 

    Q. Can I use wheat flour instead of all purpose flour ? 

    Yes, you can. But the bread may turn slightly denser in texture. For best results, use all purpose flour or use a mix of both.

    Q. Can I add nuts or fruits ? 

    Absolutely ! Add chopped nuts or fruits of your choice like walnuts, almonds, raisins, cashewnut or cranberries for added texture and flavour. 

    Q. Can I bake this into a cupcake instead of loaf ? 

    Yes, just transfer the batter to cupcake mould and bake for a shorter time. Insert a toothpick to check if it's done.

    Ingredients
      

    Dry Ingredients

    • 1½ cup All Purpose Flour 180 grams
    • ¼ teaspoon Salt
    • 1 teaspoon Baking Soda
    • 1 teaspoon Ground Cinnamon

    Wet Ingredients

    • ½ cup Granulated Sugar 100 grams
    • 1 cup Dried Cranberry Sauce
    • ⅓ cup Sunflower Oil 80 ml
    • 1 large Egg
    • 1 teaspoon Vanilla Extract

    Instructions
     

    • Preheat oven to 170 degree C. Line a loaf pan with parchment paper and set aside.
    • Take flour, salt, baking soda, cinnamon in a bowl and mix well. Set aside.
    • Now take cranberry sauce, sugar, oil, egg and vanilla in a bowl and mix well. Add in flour mix in and fold gently. The batter will be quite thick.
    • Now transfer the batter to the pan and bake for 35 to 45 mins until a toothpick inserted comes clean. Now remove it and cool down for 15 mins.
    • Now remove from pan and cool down completely. Slice and serve.
