I can never have enough of muffins or cupcakes recipe. Each time i try different recipe and each time i keep on loving this. This is a fluffy and soft muffin recipe. I used my leftover cranberry sauce to make this even more delicious.

Preparation Time : 10 mins
Baking Time : 20 to 25 mins
Serves: 6 to 8 muffins
Ingredients:
All Purpose Flour / Maida - 1 cup / 120 grams
Baking Powder - ½ tsp
Baking Soda - ½ tsp
Salt - a pinch
Cinnamon Powder - ½ tsp
Eggs - 1
Oil - ¼ cup / 60 ml
Milk - ½ cup / 120 ml
Vanilla Essence - 1 tsp
Cranberry Sauce -½ cup (Recipe here)
(My 1 cup measures 240 ml)
Method:
Preheat oven to 190 degree C. Line a muffin tray with cupcake cases and set aside.
Take flour, baking powder, baking soda, salt, cinnamon in a bowl and whisk well.
Now take eggs, oil, milk, vanilla in a bowl and mix well.
Add in the flour mix and fold gently.
Now add in cranberry sauce and mix well.
Spoon this into cupcake wrappers and bake for 20 to 25 mins.
Remove and let it cool down for 10 mins.
Now serve.
