    Creamy Mushroom Pasta Bake

    Baked pasta is always my favourite. They are so tasty and so cheesy and bubbly and simply delicious.I have been making quite a lot of pasta recipes recently, because hubby got three packets of different shaped pasta and a packet of spaghetti as well. Because of his love for pasta. Somehow i managed to finish an entire packet of spiral pasta by making this zuchinni pasta and a very tasty eggplant pasta (will share it soon). 

    About this Recipe

    The fleshy and edible fruit bodies of several species of macrofungi are known as edible mushrooms (fungi which bear fruiting structures that are large enough to be seen with the naked eye). They can grow below ground (hypogeous) or above
    ground (epigeous), and can be picked by hand. Criteria for determining edibleness include the absence of poisonous effects on humans as well as desirable taste and aroma. Edible mushrooms are eaten for their nutritional and culinary benefits.
    Mushrooms, particularly dried shiitake, are high in umami flavour.

    Many fungal species are harvested wild or cultivated to make edible mushrooms. Wild mushrooms that are easily cultivated and common are frequently available in markets.

    Ingredients for Creamy Mushroom Pasta Bake

    • Pasta - 2 cup dried ( I used penne)
    • Olive Oil - 3 tbsp
    • Garlic - 5 cloves chopped
    • Onion - 1 medium size chopped finely
    • Capsicum - ½ chopped finely
    • Green Chillies - 4 chopped finely
    • Mushrooms - 200 grams sliced
    • Oregano - 1 tsp
    • Basil - 1 tsp
    • All Purpose Flour / Maida - 1.5 tbsp
    • Milk - 1.5 cup or more
    • Salt to taste
    • Mozzarella Cheese - 1 cup or as needed

    This is a delicious pasta dish which i made few days back. I served it with my spicy jerk chicken and it was delicious.

    Where does mushroom grow in India?

    Seasonal button mushroom growers are limited to temperate regions such as Himachal Pradesh, Jammu and Kashmir, hilly regions of Uttar Pradesh, hilly regions of Tamil Nadu, and North Eastern hilly regions, where they harvest 2-3 crops of button mushrooms per year.

    Ingredients for Mushroom Pasta Bake Recipe

    Pasta :
    Fresh pasta frequently contains eggs, the flavours of dried and fresh pastas are likely to differ. Similarly, the flavours of egg noodles, soba noodles, and rice noodles will differ due to the different ingredients.

    Garlic :
    Garlic has a distinct, pungent flavour that, when raw, borders on spicy and, when cooked, borders on nutty. Sulfur compounds, such as diallyl disulfide, contribute to the mustard-like flavour profile. It loses its acrid raw flavour when dried and crushed into garlic powder, making it ideal for seasoning dishes.

    Mushrooms:

    Edible mushrooms have a meaty, earthy flavour and are one of the foods that contain umami, the fifth primary taste.

    Oregano :
    It has a strong, pungent aroma and flavour and should be used with caution. In cooking, both fresh and dried forms of the herb are used. Oregano is anti-inflammatory and has the ability to kill certain infections. It is high in dietary fibre, as well as vitamins A, C, K, and iron.

    How to Make Creamy Mushroom Pasta Bake

    1. Start by bringing lots of water to a boil, add some salt to it and add in pasta. Cook till the pasta is cooked. Drain and set aside.
    2. Heat oil in a pan, add in garlic and saute for a min.
    3. Add in onion, chillies, capsicum and saute for a min. Add salt as well.
    4. Add in mushrooms and saute on high heat till it is browned.
    5. Now add in basil and oregano. Saute them well.
    6. Add in flour and saute them for a good 2 mins till floury smell leaves away.
    7. Pour in milk and mix well. Cook till the sauce thickens.
    8. Add in cooked drained pasta and toss well in the sauce.
    9. Pour this in a baking dish and grate some cheese over it.
    10. Meanwhile preheat oven to 180 degree C.
    11. Pop this in oven and cook for 10 to 15 mins.
    12. Serve hot.

    Start by frying some garlic in oil

    Add in onions, capsicum and green chillies

    sprinkle in some salt

    saute for a min

    let it fry and get some colour

    Now sprinkle some all purpose flour / maida

    keep mixing

    now the sauce has thickened and done, taste and adjust the seasoning

    i cooked some penne in salted boiling water as per package directions

    drain the pasta and add to the sauce

    transfer this whole thing to a baking pan

    grate some mozzarella cheese over it
