    Childhood favourite egg puffs with hot masala chai is my nostalgic combination. Egg puffs is made with puff pastry, spicy onion filling and boiled eggs. Making egg puffs at home using readymade puff pastry is a breeze. Learn how to make egg puffs with stepwise pictures and video.

    If you ever ask me what is my childhood favourite dish that I relish till today, It has to be puffs. I love chicken puffs and veg puffs too, but egg puffs has a special place in my heart. These Indian egg puffs has a spicy onion mixture which is almost caramelised and topped with a boiled egg. Once baked, it gets crispy and flaky. The sweet onion filling taste so yummy with the flaky puff pastry.

    If you can find store bought puff pastry sheets you can easily make this at home in less than an hour. Else you might need to make puff pastry sheets at home which is not that hard too. In the recipe of puff pastry sheets, I have shared two version, all butter pastry dough and a puff pastry with shortening which is my preferred one.

    About Egg Puffs

    Puffs is an Indian pastry which is so popular in all the bakeries around India. You can buy it in different flavours including chicken, veg, mutton, paneer and more. It is made with flaky puff pastry filled with spicy filling of choice and baked. These are individual portion size which is perfect for evening tea time. 

    Egg puffs is one of the popular from the puffs flavour. It is made in its unique shape which is square. Egg puffs has a sweet onion filling topped with half an egg in each puffs. This is quite filling on its own or with a cup of tea, coffee or any beverages. Making egg puffs at home is super easy if you have ready made puff pastry sheets, else you have to make it at home. I have an easy step by step recipe for making homemade puff pastry sheets.

    This version of egg puffs is made just like my childhood nostalgic egg puffs recipe with only onions. The onions is cooked down till caramelised and sweet. It is seasoned with soy sauce, ketchup mainly for taste. If you love egg puffs, you have to try with this filling. This version of egg puffs is authentic and made with all butter puff pastry, if you are health conscious and looking for a healthier alternative, check my whole wheat puffs. 

    My Egg Puffs Recipe & Tips

    As mentioned egg puffs is my favourite snack of all time apart from samosa, pakora and fries. The taste of puffs rely on the filling used, this onion filling is perfect in puffs which taste so delicious together. Here are my tips for perfect puffs 

    • Start by making the filling, cook the onions till it gets soft and caramelised. It adds sweetness to the puffs. 
    • Soy sauce doesn’t add Chinese flavour the puffs, it enhance the taste, colour and adds umami flavour to the puffs. 
    • Tomato ketchup adds tangy tomato taste to the filling without making the filling watery which happens when using fresh tomatoes. 
    • Use only half a boiled egg, using whole egg may make egg puffs too bulgy. 
    • Make sure the puff pastry is cold when when baking, so it puffs up and gets flaky. 

    Egg Puffs Ingredients 

    Puff pastry sheets - I used ready made frozen puff pastry sheets. You can use homemade puff pastry as well. 

    Eggs - authentic egg puffs is filled with a spicy onion filling and boiled egg. Usually hard boiled egg is used in the stuffing. 

    Onions - sliced onions is cooked until caramelised which adds sweetness to the puffs. This form the base of the filling. So make sure to sauté them until caramelised. 

    Ginger garlic paste - using fresh ginger garlic adds aroma and taste to the filling. 

    Spices - I used chilli powder, salt and black pepper powder alone. 

    Seasonings - for seasoning sauces, I added soy sauce and tomato ketchup which provides both sweetness, tangy and umami flavour. 

    Making Egg Puffs with 4 Easy Steps

    Make Filling - Heat oil in a pan. Add in sliced onions and mix well with the oil. Cover and cook on medium low heat until onions start to caramelise.  Now add in ginger garlic paste and mix well for a min. Add in chilli powder, black pepper powder, salt and stir for 30 seconds. Add in soy sauce and tomato ketchup and mix well for another 30 seconds. Turn off the heat and set aside so the filling can cool down. 

    Pre-Preparation - Preheat oven to 180 degree c (360 degree f). Line a baking tray with parchment paper.  Now take puff pastry sheets from freezer 15 minutes before baking. Let it thaw a bit. If your pastry is not pre sliced, cut it into squares. 

    Assembling - Take a square of puff pastry, spoon generous tbsp of onion filling in the middle, top with one half of a boiled egg, yolk side facing down. Bring two of the edges together and seal them. If it doesn’t seal well, use some water to seal. Now seal other two side as well. 

    Baking Puffs - Place prepared puffs on the baking tray leaving some space between them to puff and expand. Place the puffs into the oven and bake for 25 to 30 minutes until the puffs are golden and flaky.  Remove from oven and let it cool for 5 minutes before removing from tray and serving. 

    How to Make Egg Puffs (Stepwise Pictures)

    Make Filling

    1)Heat oil in a pan. Add in sliced onions and mix well in the oil for few minutes.

    2)Cover with a lid and cook on a low heat for 4 to 5 minutes.

    3)Now the onions has turned soft and translucent. This will make the onions sweeter.

    4)Add in ginger garlic paste, saute for 2 minutes until the raw smell leaves.

    5)Now add in chilli powder, salt, black pepper.

    6)Saute the onions for few minutes with the spices until it gets fragrant.

    7)Now add in soy sauce and tomato ketchup. Mix this well.

    8)This is your onion filling. It taste slightly sweet, tangy and spicy. Goes perfect with egg puffs.

    Puff Pastry

    9)For Making egg puffs, I am using readymade ready sliced puff pastry sheets. You can make puff pastry at home, check my recipe.

    Make sure your puff pastry is thawed slightly but not too soggy, so the butter leaks out.

    10)This puff pastry is already sliced. If your pastry is not sliced, you have to slice it into squares.

    Shaping Egg Puffs

    11)Take a piece of puff pastry, spoon a generous spoonful of onion filling in the centre. Top with half a boiled egg.

    12)Pinch the sides together. If it is not sealing well, you might apply some water to stick it well.

    13)Fold from other sides too. Seal it well.

    Baking Egg Puffs

    14)Place the prepared puffs on a baking tray lined with parchment paper. Place it into a 180 degree C preheated oven and bake for 25 to 30 minutes until flaky and puffed.

    15)Remove the puffs from oven and let it cool for 5 minutes in the tray. Place it on serving plate and enjoy.

    Expert tips 

    • Make sure your puff pastry is chilled and cold before you bake, so it puffs beautifully. 
    • You can use any vegetables in your filling. Carrots, green peas are great addition. 
    • Instead of ready made puff pastry, you can use homemade puff pastry too. 
    • Shredded chicken can be added into the onion for taste. 

    Serving and Storage

    Leftover puffs can be kept in fridge and reheated in otg for few minutes to make it flaky. Egg puffs taste great with tomato ketchup.

    Equipment

    • Oven or OTG
    • Baking tray and parchment paper
    • Cooking pot

    Ingredients

    • 6 squares Ready made and Ready Sliced Puff pastry
    • 3 no Hard Boiled Eggs halved

    For filling

    • 1 tbsp Oil
    • 2 large Onions peeled and sliced thinly
    • 1 tbsp Ginger garlic paste
    • 1 tsp Kashmiri chilli powder
    • ½ tsp Black pepper powder
    • 1 tsp Salt
    • 1 tsp Dark soy sauce
    • 4 tbsp Tomato Ketchup

    Instructions

    • Heat oil in a pan. Add in sliced onions and mix well with the oil. Cover and cook on medium low heat until onions start to caramelise.

      hi. my micro wd convection mode only has a max of 200°c temp in it. so can i bake at 200°c for 20 to 25minutes?
