    I have already made a buttery puff pastry sheet recipe here in this blog, but that has loads of butter in them and made with maida and also it takes lots of time to finish. I made a spicy veg puffs using that and it is a perfect recipe. Many of you have tried it and told me that it turned out good too.

    But i wanted to try a whole wheat version and also use oil instead of butter. One day i was thinking so deeply about this and a wonderful idea struck my mind. I put that idea on action one evening and it turned out quite good actually.

    About Wheat Puffs

    Puffs is one of the most popular and loved snack recipe around India. It is made using plain flour, butter, and filling of choice.

    Even though it is tasty and addictive, it is not the best health food. So here is a recipe which you can try if you are looking for a healthy alternative.

    This puffs is made with whole wheat flour and uses a layering technique which helps to create multiple layers. You can stuff it with anything you prefer, I went with a spicy egg filling and it turned out delicious.

    I made a spicy egg filling and stuffed it inside the sheets and baked it. Loved it to the core. It may not be so flaky and buttery, but it almost had lots of layers in them and was like a shortcrust pastry without the butter.

    Step by Step Pictures

    Make Wheat Dough

    1)take all your ingredients for making whole wheat pastry dough.

    2)take wheat flour and little all purpose flour in a bowl.

    3)Add in sugar.

    4)Add salt.

    5)Add some oil or melted butter into this.

    6)Rub oil into the flour so it create a shortcrust like texture.

    7)Pour water slowly and knead to a soft dough.

    8)Cover and let the dough rest for 30 minutes.

    Layering sheets

    9)Divide the dough into 5 equal balls.

    10)Roll each ball into a sheet.

    11)Now brush each sheet with some oil.

    12)Stack each layer over on top of each sheet. Brush oil in between each sheet.

    13)Now all layers are stacked.

    14)Roll it thin so each layers stick to each other and forms a rectangle. Cut it in half.

    15)Now stack other half over the other sheet.

    16)Roll it so it forms a rectangle again.

    17)Cut in in half.

    18) Stack it on more time. This time you don't need to roll it again.

    19)Trim off the edges. Cut it into small squares.

    20)These are your wheat puff sheets. Set aside.

    Make Egg Filling

    21)Take ingredients for the filling.

    22)Heat oil in a pan. Add some fennel and let them splatter.

    23)Add in sliced onions, bell peppers and saute for 2 to 3 minutes.

    24)Add in crushed ginger and garlic. Saute until aromatic.

    25)Season with salt and sugar and mix well.

    26)Pour in ketchup for taste.

    27)Add in spice powders.

    28)Stir fry until fragrant.

    29)Add in halved boiled eggs and toss through. You may add little water if needed.

    30)Now the filling is ready.

    Assembling Puffs

    31)Take a sheet of the wheat puff sheet. Spoon filling inside along with half of the egg.

    32)Fold it.

    33)Press fork on the edges.

    34)Place on a baking tray.

    35)Brush oil on top of the puffs.

    36)Bake until cooked.

    Ingredients
      

    For Wheat Pastry Dough

    • 1 cup Whole Wheat Flour
    • ¼ cup All Purpose Flour
    • 1 teaspoon Sugar
    • 1 teaspoon Salt
    • 3 tablespoon Oil for adding in dough
    • 3 tablespoon Oil for brushing between layers
    • Water as needed

    For Egg Wash

    • 1 no Egg
    • 2 tablespoon Water

    For Spicy Egg Filling

    • 1 teaspoon Oil
    • 2 teaspoon Fennel Seeds
    • 1 large Onion peeled & sliced thinly
    • ½ medium Capsicum sliced thinly
    • 1 tablespoon Ginger Garlic Paste
    • 1 teaspoon Chilli Powder
    • 2 teaspoon Coriander Powder
    • ½ teaspoon Turmeric Powder
    • 1 teaspoon Salt or to taste
    • 1 teaspoon Sugar
    • 2 medium Tomatoes chopped finely
    • 3 tablespoon Tomato Ketchup
    • 3 no Hard Boiled Eggs sliced in half

    Instructions
     

    • Take wheat, maida, salt, sugar in a bowl and mix well. Add in oil and use your finger to make it like crumbs. Now add in water and knead it to a dough. Cover the dough with a plastic sheet and let it rest for 30 minutes.
    • Now divide into 5 balls. Take one ball and roll it into a rough square shape.Set aside for a min. Roll all five balls like this.
    • Now take one rolled roti and apply oil generously over it. Place another rolled roti over it and spread oil. Now place another and repeat this for all 5 roti.
    • Now use a rolling pin to roll it little thin. Cut in half. Apply oil on one side. Place another side over that. Roll it again thinly. Cut in half. Apply oil on one size. Place another side over that. Roll this little. trim the edges, and cut into 5 pieces. Now place the sheets in a plate and set aside.
    • Heat oil in pan, add in fennel seeds and saute for 30 sec. Add in onions and capsicum and saute for 2 mins.
    • Add in ginger garlic paste. Saute for 30 sec. Add in all spice powder, salt, and sugar. Mix well. Add in tomatoes and tomato ketchup. Cook for 2 mins. Add in cooked sliced eggs and mix well. Filing done.
    • Now take one sheet and place the filling in the center, fold over and use a fork to pierce the sides and edges.
    • Place it in a greased foil lined baking sheet. Repeat with the remaining sheets. Now break a egg and beat it well with some water. Brush this egg wash all over the puffs.
    • Bake this in a 220 degree C preheated oven for 25 to 30 mins. Remove and serve.
