Ennai Urulai Kizhangu Varuval Recipe / Chettinad Potato Roast Recipe

One of my favourite vegetable in the world is potatoes. If i have potatoes on hand, i can create a meal instantly. Delicious and very versatile vegetable.

This roast turned out so yummy and i have been making this quite often these days. Hope you will give this a try and let me know how it turns out for you..

Preparation Time : 10 mins
Cooking Time : 30 to 35 mins
Serves : 4

Ingredients:

Potatoes – 4 large peeled and cubed
Onion – 1 large sliced
Garlic – 6 fat cloves chopped
Curry leaves a handful
Oil – 4 to 5 tblspn
Red Chilli Powder – 1 tblspn
Fennel Seed Powder / Saunf or Sombu Podi – 2 tsp
Turmeric Powder / Manjal Podi – 1 tsp
Salt to taste


Method:

Take cubed potatoes in a sauce pan, add in salt and cover with water. Cook this till the potatoes are tender. Drain it in a bowl.

Now add in fennel seed powder, salt, chilli and turmeric powder and toss well.

Heat oil in a pan, add in garlic and curry leaves. Saute them for a min.

Add in the onions and saute for 5 mins or so.

Add in the potatoes and toss well in the oil.

Cook this on medium high heat till the potatoes are well roasted. It will take around 10 mins. Keep mixing inbetween.

Turn off the heat and serve with rice.

Take your potatoes
Peel the skin off
cube them
take them in a sauce pan and cover with water
add in some salt
heat it and bring it to a boil
drain them
take them in a bowl
season with some salt
add in some fennel seed powder
add in chilli powder and turmeric powder
toss well 
set aside for few mins
heat oil in a pan
add in lots of chopped garlic and curry leaves
add in sliced onions
saute them for 5 mins or so
add in the cubed potatoes
mix well
cook them till everything is well roasted..it will 
take around 10 mins or so
serve

    Hi Aarthi have become a big fan of your blog. Tried your egg pepper roast turned out really yum . Just a small tip while boiling potatoes just steam it in pressure cooker by placing the potato cubes inside a vessel because cooking potato in water and then draining it makes it lose its nutrients. Were usually do it that way and I hope you will try it too keep up the great job
