Our family friend bought couple pounds of good quality cashews all the way from goa. I was thinking to make some cashew snacks using that for quite a long time. Finally couple days back i made this and a indian spiced cashews. Both of them turned out wonderful, planning to make many more flavours as well..

Whole Cashews - 2 cups
Honey - 3 tblspn
Butter - 2 tblspn
Cinnamon Powder - ½ tsp
Salt - 1 tsp
Sugar - 1 to 2 tblspn
Preheat oven to 180 degree C. Line a baking pan with parchment paper or foil and set aside.
If you are using raw cashews, roast it in a dry pan for few mins till it is roasted lightly toasted.
Now take honey, butter in a sauce pan and melt it gently. Now add in cinnamon and salt and mix well.
Pour this over the cashews and mix well.
Pour this over the baking pan and spread in a single layer. Now pop this in oven and bake for 5 to 6 mins.Remove it and toss gently, pop it back in oven and bake for another 5 mins.
Now remove it from oven and let it cool down for 5 mins.
Take it in a bowl and sprinkle with some sugar. Toss well.
Serve or store it in a air tight container.

|pour this over the cashews|
|spoon this into parchment lined baking pan|
|spread in a single layer|
|after 5 mins, take it back from oven|
|now toss well and bake again|
|now it is done|
|sprinkle with some sugar|
