Tomorrow we are going to pierce maha’s ear and take her birth hair in tiruchendur. We have made everything ready and we are starting early in the morning. I am so scared, how am i gonna manage maha, i cant even hold maha or stand near when they put vaccination. I just give her to my mom or hubby and will leave the place. Tomorrow is going to be very frustrating for me. But i just want to admire maha with her tiny earring. Will share pics of the function later.

Now coming to this recipe. This is one of the healthiest burger you will ever have, plus it taste so yum. Hubby loved it so much, he asked me to do it again. The combo of beets and tofu worked really well. You can have it as cutlet but i made burgers and we had it for lunch.

.

I made burger out of the whole wheat dinner rolls which i made. First i thought of sharing that first and posting this next. But somehow i went with this one as first..Will share that recipe soon.
Hope you will like this and let me know how it turns out for you..

Preparation Time : 15 mins
Resting Time : 30 mins
Cooking Time : 3 to 4 mins per batch
Makes : 7 to 8 cutlets

Ingredients:

For Cutlet:
Oil – 2 tsp + for shallow frying
Fennel Seeds / Sombu / Saunf – 1 tsp
Onions – 1 medium chopped finely
Chilli Powder – 1 tsp
Coriander Powder / Malli Podi – 1 tblspn
Cumin Powder / Jeera Podi – 1 tsp
Garam Masala powder – 2 tsp
Salt to taste
Beetroot – 1 large peeled and grated
Tofu – 100 grams crumbled (i used half a packet)
Wheat Bread – 1 slice
Cornflour / Cornstarch – 3 tblspn
Water – 1/4 cup
Bread Crumbs – 1 cup or as needed

For Burger:
Burger Buns
Onions
Tomatoes
Tomato Ketchup
Method:
Heat oil in a kadai. Add in fennel and saute for a min.
Add in onions and saute for a min.
Add in the spice powders and mix well.
Add in beetroot and salt. Saute this for 4 to 5 mins.
Remove this to a bowl and let it cool.
Now add in some crumbled tofu and crumbed wheat bread. Mix well with your hands.
Form this into small pattice.
Mix cornflour with water. Dip the pattice in this mix and roll it in bread crumbs.
Now place this in a plate and chill it for 30 mins.
Heat 3 to 4 tblspn of oil in a frying pan. Place the pattice and fry on both sides till golden. You can deep fry this too.
Now cutlet done, you can enjoy this with ketchup.
Now for the burger. Slit open some burger buns. You can toast them if you need.
Spread ketchup on both sides.
Place a cutlet and top it with sliced onions and tomatoes.
Cover with other buns and enjoy.
Notes:
1)Beetroots dont need too much cooking, just get the raw smell out of it is enough.
2)You can add paneer instead of tofu. You can also add a boiled mashed potato instead of tofu.
3)Adding crumbled bread binds the mix together. You can add some breadcrumbs too.
4)I made fresh breadcrumbs by running few wheat bread slices in a mixer till it is coarse.
5)You can deep fry the pattice instead of shallow frying.
6)You can serve the cutlet as it is with some ketchup. It taste good.
7)I used wheat dinner rolls, you can use any buns.
8)You can add lettuce, pickled peppers and cheese in burger too.
9)Chilling the pattice in fridge for 30 mins make them to hold together really well.
10)Instead of dipping them in cornflour mix, you can use egg too.
11)When pan frying the pattice, fry them on a low to medium heat till they turn crispy.

Pictorial:
Take all your ingredients
Peel your beetroot
Grate it
Chop your onion as well
Heat oil in a pan
Fry some fennel seeds
Add in onions
saute for a while
Add in spice powders
saute for a min
Add in grated beets
sprinkle in some salt
saute for 4 to 5 mins till the raw smell leaves
remove to a bowl and let it cool
add in some crumbled tofu
add in some crumbled wheat bread..I used just 1 slice
use your hands to mix this really well..
take a small portion
shape it into round ball
flatten it
all done
take some cornflour in a bowl
mix it with some water to form a thin paste
now time to make cutlets
take a patty
dip it in the cornflour mix
now coat it in breadcrumbs..I used fresh wheat bread crumbs..
coat on all sides
arrange it in a plate
chill this for 15 to 30 mins
now heat some oil in a pan..Just few tblspn and
fry the pattice
Flip over once it is golden
remove to a plate..You can have it as it is..
But i made some burgers out of it..
