Fried chicken is one of the most requested recipe on my blog. I wanted to make it for quite sometime. Finally I made it last sunday and it was super duper hit. The chicken was so tasty. It was crispy and juicy and so moist and flavourful. This is similar to my broasted chicken.
About KFC Chicken
KFC (also known as Kentucky Fried Chicken) is an American fast food restaurant chain headquartered in Louisville, Kentucky that specializes in fried chicken. It is the world's second-largest restaurant chain (as measured by sales) after McDonald's, with 22,621 locations globally in 150 countries as of December 2019.
KFC was founded by Colonel Harland Sanders, an entrepreneur who began selling fried chicken from his roadside restaurant in Corbin, Kentucky during the Great Depression.
KFC's original product is pressure fried chicken pieces, seasoned with Sanders' recipe of 11 herbs and spices. The constituents of the recipe are a trade secret. Larger portions of fried chicken are served in a cardboard "bucket", which has become a feature of the chain since it was first introduced by franchisee Pete Harman in 1957.

KFC Fried Chicken Secret Ingredients
Chicken
Chicken has to be with skin on and bone in. The skin is what makes the chicken so crispy and moist. Also the bone in chicken turns out super juicy than boneless. Brine the chicken for maximum juiciness.
Dry Ingredients | Flour
The flour added in the chicken is plain flour and corn flour. Both the flour adds crispy texture to the chicken. The cornflour adds crunchy texture to the chicken.
Spices for Chicken
Mixture of many spices and herbs are added for the kfc flavour. Spices like garlic powder, chicken stock powder, white pepper powder, mustard, dried ginger powder, dried thyme, dried oregano, Dried Basil, Paprika, Black Pepper, Salt
Binding Ingredients
There is no particular binding ingredients for the chicken. Brined chicken is strained and dipped in cold water. This moistness makes the seasoned flour stick to the chicken.
Oil
Use extra oil for frying the chicken. Deep frying is what recommended in this recipe. Use flavourless oil like canola, vegetable oil or refined oil.

How to Make KFC Chicken at home
Brining Chicken
Take cleaned chicken in a bowl. Add salt, sugar, lemon juice and lemon peel in the bowl. Cover with cold water. Set this bowl in fridge for at least 2 hours to overnight. Once the chicken is brined. Strain and rinse it really well. Set aside.
Seasoned Flour
Mix flour, cornstarch, with all the spices, herbs and baking powder. Mix really well and set aside. This is seasoned flour.
Preparation of KFC
Take ice cold water in a bowl. Dip the chicken in cold water for 7 seconds. Remove it and add to seasoned flour, squeeze it really well so the flour coats the chicken well. Place it on wire rack. Prepare the remaining few pieces the same way.
Frying KFC
Heat oil for deep frying. Make sure you have a lid for the pot you use. Drop chicken in hot oil and fry for 7 mins covered. Remove the lid, flip the chicken and cook for another 7 mins. Flip one more time and fry till golden brown. Remove the chicken using a pair of tongs and place the fried chicken on a wire rack. Let it drain for 2 mins. Serve hot.
KFC Fried Chicken (Step by Step Pictures)
1)Take cleaned chicken in a bowl. Make sure you use chicken with bone in and skins on.
2)To brine. Add in salt and sugar.
3)Squeeze in one lemon and add the lemon peel inside. Cover with cold water. Make sure the chicken is immersed in cold water. Set aside in fridge to brine for at least 2 hours.
6)Now let's make the seasoned flour. Take flour in a large shallow bowl. Add in cornstarch as well.
8)Add in all the spices and herbs.
9)Mix really well and set aside. Seasoned Flour is done.
11)Once the chicken is brined. Strain it and rinse the chicken once.
13)Now take ice cold water in a bowl. Make sure the water is very cold. You can even add some ice cubes in the water. Dip the chicken in the cold water for 7 seconds.
14)Take the chicken and add it to seasoned flour.
15)Squeeze and coat the chicken in flour really well
16)Chicken is coated well in the flour.
17)Set aside in a wire rack. Let the chicken sit and dry for one minute.
18)Add it to hot oil.
19)Cover and cook on medium heat for 7 mins.
20)Flip over and cook for another 7 mins. This time don't cover the chicken. Flip the chicken in between and fry till golden.
21)Drain and serve.

- Brine the chicken to infuse maximum flavour in chicken and make the chicken moist and juicy even after frying.
- Use chicken with skins on and bone in. The skins is what gives super crispy chicken.
- Make sure the seasoned flour is heavily seasoned, since it is only flavour you add to the chicken.
- Squeeze the chicken well when coating it in seasoned flour. This adds the flaky texture to the chicken.
- Fry the chicken covered during the first 7 minutes. This ensure the chicken cooks all the way through.
- Make sure you adjust the heat accordingly when frying.

Ingredients
- 500 grams Chicken with Skins & Bones On
- 1 cup All Purpose Flour
- ½ cup Cornflour / Cornstarch
- Oil for deep frying

- 1 tbsp Garlic Powder

i was shown demo how they make kfc chicken in an outlet once. what they did was, first they dipped the chicken in flour mix. then they quickly dipped it in water and dipped it again in the same flour mix. this way, the water droplets become the flakes we see. the process has to be quick to get good number of flakes. u can try that instead of corn flakes.
