    Molten Chocolate Lava Cake Recipe with Step by Step Pictures. You will love this Delicious and gooey molten cake which needs a handful of basic ingredients which you might already have on hand.

    Chocolate Lava Cake Recipe

    I have a weakness for chocolate cakes, particularly molten lava cakes. I throughly enjoy the gooey chocolate cake. So far I have made an eggless version and a microwave version as well. But making a proper lava cake was in my bucket list. Yesterday was the day and finally i made it. It turned out to be a hit. It is like molten perfection, perfect lava flowed through the cake.     About Lava Cake Recipe

    Lava cakes are nothing but under cooked chocolate cake. The cake is cooked in single serving ramekins and served as single serve desserts.

    This cake calls for just 6 ingredients and it is so easy to make. The main thing you have to keep in mind for lava cake is the timing. I used a 240 ml ramekins, but if you are using a smaller mould than that, then the baking time will be less. So you have to keep it in mind.

    And make sure you read the recipe well for adjusting the molten part consistency. Hope you will give this a try and let me know how it turns out for you.

    How to Adjust the Molten Part of the Cake

    (For a 240 ml ramekin size)

    1) 12 mins - very very molten in the middle.
    2) 14mins - molten in the middle, has a little thick crust outside.
    4) 15 mins - Gooey cake alone no molten lava part.

    Ingredients for Chocolate Lava Cake

    Chocolate

    Using good chocolate is important, try to invest in the best quality chocolate for this cake. Semi sweet chocolate chips can be used. I used a combination of 40% dark chocolate and 70% chocolate. Never use compound chocolate it doesn't taste good.

    All Purpose Flour

    Very little amount of flour is used in this cake which gives the desired texture. Wheat flour can be substituted but it may affect the texture a bit. Don't increase the amount of flour in the cake else the molten part will be compromised.

    Butter

    Unsalted butter is preferred in this recipe.

    Eggs

    One whole egg and one egg yolk is used. Make sure you whisk the eggs with sugar till frothy and combined. Don't skip on the egg yolk since it makes the cake set.

    How to Make Chocolate Lava Cake

    Melting Chocolate & Butter

    Take chocolate and butter in a microwave safe bowl and pop it in microwave for 20 sec. Stir to melt. If it is not melted, pop it again for 10 sec and melt it. If you don't have microwave, You can melt it over double boiler. Place the bowl over a sauce pan of simmering water and mix until completely melted. Once the chocolate is melted set aside.

    Pre-Preparation

    Now take small ramekins. I used 240 ml ramekins. Grease it well with butter, dust with some cocoa powder and coat it on all sides and Set aside. Preheat oven to 220 degree C.

    Making Cake Batter

    Take egg, egg yolk, salt in bowl. Use an electric beater to whisk till frothy. Add sugar slowly and mix till frothy. Add in the melted chocolate, flour and gently mix to combine.

    Baking Lava Cake

    Now divide the batter between the two ramekins. Now place the ramekins in oven and cook for 12 to 13 mins. Remove it and let it cool for 1 mins in the ramekin. Use a butter knife to gently release the cake from the mould. Invert it into plate and serve warm with a scoop of vanilla ice cream.

    Ingredients

    • 180 grams Semi Sweet Chocolate (180 grams chopped)
    • 50 grams Butter + more for greasing moulds
    • 1 Egg
    • 1 Egg Yolk
    • ⅛ tsp Salt
    • ¼ cup Sugar (50 grams)
    • 2 tbsp All Purpose Flour | Maida (15 grams)
    • Cocoa Powder for dusting moulds

    Instructions

    • Take chocolate and butter in a microwave safe bowl and pop it in microwave for 20 sec. Stir to melt. If it is not melted, pop it again for 10 sec and melt it. If you don't have microwave, You can melt it over double boiler. Place the bowl over a sauce pan of simmering water and mix until completely melted. Once the chocolate is melted set aside.

    • Measurement is key. Make sure you measure everything in proper weighing scale to be precise.
    • Don't add too much flour, else it may turn cakey.
    • Using good quality chocolate is important for taste of the lava cake.
    • Use room temperature eggs for even baking.
    • Keep a very close eye on the chocolate lava cakes in the oven as you do not want them to over bake. The center should still be jiggy.
    • Make sure the oven is preheated before adding the ramekins inside. The high temperature helps the exterior of the cake bake faster than the inside which results in perfect gooey center.

    Make Ahead & Storage

    You can make the batter in advance and store in fridge. Make sure the batter comes to room temperature before baking.
    Lava cakes taste best when served immediately. Baked cakes doesn't store better.

    Chocolate Lava Cake Recipe with Step by Step Pictures

    1)Take your chocolates. I used a combination of 49% dark and 70%cocoa.

    2)Take chocolate in a microwave safe bowl.

    3)Add butter

    4)pop it in microwave for 20 sec. Stir to melt. If it is not melted, pop it again for 10 sec and melt it. If you don't have microwave, You can melt it over double boiler. Place the bowl over a sauce pan of simmering water and mix until completely melted. Once the chocolate is melted set aside.

    5)grease ramekins with melted butter.

    6)Dust it with cocoa powder

    7)Take whole egg in a bowl.

    8)Add in egg yolk.

    9)Add in salt.

    10)Whisk till light and frothy.

    11)Add sugar slowly and whisk again.

    12)It will take around 3 to 4mins.

    13)It will look like this.

    14)Add in melted chocolate.

    15)Add in flour.

    16)mix till combine.

    17)Spoon it into the greased ramekins.

    18)Bake till done. Remove from oven and set aside for 1 min in the mould.

    19)Gently un mould.

    20)Serve warm with ice cream and fruits.

    21)So gooey and delicious.
