    Moong sprouts kosambari, a refreshing South Indian style salad. It is a nutritious salad made with moong sprouts, pomegranate, yogurt, sugar, salt and chaat masala. It can be served as a side dish for meals, biryani, pulao, paratha or enjoyed as a light salad. 

    Moong Sprouts Kosambari

    This is one quick and healthy salad which I made few days back. It was very cooling and refreshing, i loved it so much. If you are on diet, you can have a bowl of this for lunch, it keeps you filling for a long time. This is a cooling and tasty salad.

    What is Kosambari?

    Kosambari is a traditional Karnataka usually prepared for festivals like Navratri, Ramnavami or during special occasions. In Kannada, it is referred as "Kosambari", while in Tamil it is known as "kosumalli", which means freshness in a bowl. 

    About Moong Sprouts Kosambari

    Moong sprouts and pomegranate kosambari is a super healthy, crunchy and vibrant South Indian salad recipe. It is one of those recipes to make when you want something light, refreshing and packed with nutrients. 

    The crunchy moong sprouts are high in protein, while pomegranate adds a burst of color and sweetness. The curd blends everything together to make a cooling and probiotic packed salad. 

    What makes this kosambari special is that the recipe can be made in less than 10 minutes, making it perfect for busy days or a quick fix to have something healthy without spending too much time in the kitchen.

    Kosambari is a versatile recipe that you can customize by adding other vegetables like grated carrots, beetroot, raw mango, cucumber, corn, peas, chickpea or mixed sprouts based on what you have in the kitchen. 

    Moong sprouts and pomegranate kosambari is a filling, nutritious and refreshing salad that can be served as a side for roti, pulao, biryani, paratha or use it as a filling for your sandwiches and wraps. 

    Ingredients

    • Pomegranate : It adds a pleasant color and crunch to the salad.
    • Moong sprouts : Moong sprouts are the main star of the recipe. You can check my blog on how to grow moong sprouts at home.
    • Plain yogurt : Use thick unflavoured yogurt or curd. It acts as the creamy and cooling base of the kosambari and keeps the salad refreshing and soothing. 
    • Salt & Sugar - used as seasoning for the salad.
    • Chaat masala : Chaat masala adds a mild tangy spice kick to the salad.

    Step by Step Pictures

    1)take yogurt in a bowl. Season with salt and sugar and mix well.

    2)This is your salad or kosambari dressing. You can add spices like chillies, pepper or cumin powder in this.

    3)take a pomegranate. Cut them open.

    4)Remove the seeds from the pomegranate and add them to a bowl. I used only this fruit, but you can add chopped apples which would be lovely in this salad.

    5)Add in the moong sprouts. You can check this blog post to see how to grow sprouts at home.

    6)Pour the yogurt mix over this along with some chaat masala powder.

    7)Toss it well to combine. Keep in fridge until ready to serve.

    8)Enjoy.


    Expert Tips

    • Sprinkle some roasted cumin powder for a mild earthy aroma.
    • A squeeze of lemon juice can be added at the end for extra zing.
    • You can substitute moong sprouts with other sprouts, soaked peanuts or boiled chickpeas for extra crunch and flavour. 
    • Use thick yogurt for a creamy texture. Avoid using too sour curd.
    • If you're going to make it ahead, store the ingredients separately like sprouts, pomegranate and curd. Mix everything right before serving for the best taste and texture. 

    Storage & Serving

    Kosambari tastes best when freshly made. If you have any leftovers, store them in an airtight container and refrigerate for 1 or 2 days. 

    Moong sprouts and pomegranate kosambari is a perfect side dish that goes well with roti, pulao, biryani, tomato rice or with spicy curries and rice.

    How long does it stay fresh ? 

    The moong sprouts and pomegranate kosambari taste best when served immediately. You can refrigerate it for up to a day. 

    Can I make this ahead of time ? 

    Yes ! You can prepare the ingredients like pomegranate peeling, making moong sprouts in advance. Mix everything together once you're ready to serve. 

    Can I add other vegetables to this kosambari ? 

    You can add other vegetables like carrot, cucumber, onion, beetroot or any veggies you like in this salad. 

    Is this recipe suitable for weight loss? 

    Absolutely ! The moong sprouts and pomegranate kosambari are high in protein, fiber and low in calories making it a great option for weight loss management. 

    Can I make this as a vegan ? 

    Yes you can make it vegan by simply adding plant based or non dairy yogurt. The flavours remain the same.

    Ingredients
      

    • 1 cup Pomegranate
    • 1 cup Moong Sprouts
    • ½ cup Plain Yogurt
    • 1 teaspoon Salt or to taste
    • ½ teaspoon Sugar
    • 1 teaspoon Chaat Masala

    • Mix yogurt, salt, sugar in a bowl. Mix well and set aside.
    • Take sprouts, pomegranate in a bowl, pour yogurt mix over it. Add in chat masala and mix well. Serve cold.
