    Mumbai Style Scrambled Eggs

     

    Scrambled eggs are so versatile..They can pair pretty much with anything..I have quite a few scrambled eggs recipes in my blog..I love them so much, i cannot stop inventing new recipes.I also have a spinach scrambled eggs which is made with egg whites and cheese.

    This is a recipe which i made for breakfast oneday. It is made mumbai style with pav bhaji masala powder. Tasted just amazing. Love it so much with toasted bread and ketchup.

     
     

    Ingredients for Mumbai Style Scrambled Eggs

    • Eggs - 4 to 6
    • Oil - 1 tbsp
    • Cumin Seeds / Jeerakam - 1 tsp
    • Onion - 1 medium size chopped finely
    • Ginger Garlic Paste - 1 tbsp
    • Tomatoes - 1 large chopped finely
    • Green Bell pepper / Green Capsicum - ½ cup chopped finely
    • Red Bell pepper / Red Capsicum - ½ cup chopped finely
    • Pav Bhaji Masala Powder - 2 tsp + 1 tsp (Recipe here)
    • Salt to taste
    • Coriander leaves - 3 tbsp finely chopped
    • Butter - 1 tbsp

    How to make Mumbai Style Scrambled Eggs

    1. Crack eggs in a bowl, season with salt and 1 tsp of pav bhaji masala powder. Whisk well and set aside.
    2. Heat oil in a pan, add cumin seeds and let it sizzle.
    3. Add in onions, capsicum and fry for 1 mins. Add in ginger garlic paste and cook for a min.
    4. Add in tomatoes and cook for 3 to 4 mins.
    5. Add in 2 tsp of pav bhaji masala powder and butter and mix well.
    6. Add in egg mix and scramble it as per your liking.
    7. Add in coriander leaves and mix well.
    8. Serve with toasted bread.

    Take all your ingredients
    Take eggs in a bowl
    add pav bhaji masala powder..Recipe here
    season with salt
    whisk till it is mixed and set aside
    heat oil in a pan, add cumin seeds
    add in onions and bell pepper
    cook for a min
    add salt
    add in ginger garlic paste
    cook for a min
    add in tomatoes
    cook till mushy
    cook till it is done
    add pav bhaji masala powder (Recipe here)
    add little butter
    mix well
    add in eggs
    mix well
    scramble it
    now it is almost done
    now it is done
    add in coriander leaves
    mix well
    Take toasted bread in a serving plate
    spoon some scrambled eggs, place some ketchup on the side
    Serve
