    Mumbai Style Scrambled Eggs Recipe

    Scrambled eggs are so versatile..They can pair pretty much with anything..I have quite a few scrambled eggs recipes in my blog..I love them so much, i cannot stop inventing new recipes.I also have a spinach scrambled eggs which is made with egg whites and cheese...

    This is a recipe which i made for breakfast oneday. It is made mumbai style with pav bhaji masala powder. Tasted just amazing. Love it so much with toasted bread and ketchup..

    Preparation time : 10 mins
    Cooking Time : 10 mins
    Serves: 2 to 3

    Ingredients:

    Eggs - 4 to 6
    Oil - 1 tblspn
    Cumin Seeds / Jeerakam - 1 tsp
    Onion - 1 medium size chopped finely
    Ginger Garlic Paste - 1 tblspn
    Tomatoes - 1 large chopped finely
    Green Bell pepper / Green Capsicum - ½ cup chopped finely
    Red Bell pepper / Red Capsicum - ½ cup chopped finely
    Pav Bhaji Masala Powder - 2 tsp + 1 tsp (Recipe here)
    Salt to taste
    Coriander leaves - 3 tblspn finely chopped
    Butter - 1 tblspn

    Method:

    Crack eggs in a bowl, season with salt and 1 tsp of pav bhaji masala powder. Whisk well and set aside.

    Heat oil in a pan, add cumin seeds and let it sizzle.

    Add in onions, capsicum and fry for 1 mins. Add in ginger garlic paste and cook for a min.

    Add in tomatoes and cook for 3 to 4 mins.

    Add in 2 tsp of pav bhaji masala powder and butter and mix well.

    Add in egg mix and scramble it as per your liking.

    Add in coriander leaves and mix well.

    Serve with toasted bread.
