Simple Curd Rice

Curd rice is my absolute favorite one..It is my comfort food. When i dont feel like eating anything heavy for lunch like rice, curries and kuzhambu, i make myself some curd rice and it is totally yummy. I already have a fruity curd rice in my blog, but this one is a simple method of making it. Try it and let me know how it turns out for you..

Preparation Time : 5 mins
Cooking Time : 20 to 30 mins
Serves : 3 to 4


Ingredients:

Rice – 1 cup uncooked
Water – 4 cups 
Milk – 1 cup or as needed
Curd / Yogurt – 3 tblspn
Salt to taste

For Seasoning:
Oil –  1 tblspn
Mustard Seeds / Kaduku – 1 tsp
Urad Dal / Ulundu paruppu – 1 tsp
Cumin Seeds / Jeerakam – 1 tsp
Asafoetida / Hing / Kaya Podi – 1/4 tsp
Curry Leaves – 1 sprig
Ginger – 1 tblspn
Green Chilli – 1 chopped finely


Method:

Take rice in a pressure cooker and add water to it. Cook it for 4 to 5 whistle. Simmer for 10 mins.  Switch off the heat and let the pressure go all by itself. Open and mash it up.

Now add salt to it and mix well.Add in yogurt and milk and mix well.

Now make tempering. Heat oil in a frying pan heat it up. Add in mustard, cumin ,urad dal and asafoetida. Fry it for 30 sec.

Add in ginger, green chilli and curry leaves. Saute for 30 seconds or so.

Pour this over the rice and mix well.

Serve with pickle.
