    Ulundu Kozhukattai

    I loved this so much, delicious spicy urad dal filling stuffed inside rice flour skin..So delicious, you can even have it for breakfast. You can check out my sweet coconut pornam stuffed modak or my sesame stuffed kozhukattai..This is a spicy version made with urad dal. I will share many more version of this soon..You can check out my other ganesh chaturthi recipe too.

    About Ulundu Kozhukattai Recipe

    Kozhukkattai, also known as kozhukatta, is a popular South Indian dumpling made from rice flour and filled with grated coconut, jaggery, or chakkavaratti. Kozhukattai, while typically sweet, can occasionally be stuffed with a savoury filling. Kerala Christians prepare it on the Saturday before Palm Sunday, hence the name Kozhukatta Saturday. Modak is a similar dish that is prepared in other parts of India. This is a popular dish for the Ganesh Chaturthi festival.

    The black seeds of the leguminous plant named Vigna mungo are known as urad dal or complete black gramme. India is the worlds top producer and user of black gramme, using it to make the popular Indian soup known as Dal.

    Excellent antioxidant qualities of urad dal make it healthy for the heart, liver, and kidneys. Additionally, it has a low glycemic index and a high quantity of dietary fibre, making it a potentially beneficial food for people with diabetes and those following weight-controlling regimens.

    Ingredients forUlundu Kozhukattai

    For Dough:

    • Rice Flour / Arisi Mavu - 1 cup
    • Salt - ½ tsp
    • Water - 1 ¾ cup
    • Oil - 1 tbsp

    For Stuffing:

    • Whole Urad dal / Ulundu Paruppu - ½ cup
    • Green Chilli - 4
    • Oil - 1 tblspn
    • Mustard Seeds / Kaduku - 1 tsp
    • Urad dal / Ulundu Paruppu - 1 tsp
    • Curry leaves - 1 sprig
    • Salt to taste
    • Fresh Coconut - ¾ cup grated

    Whole Urad dal :
    When cooked, urad has an earthy flavour and an unusual mucousy texture. It is necessary to soak whole or split urad dal in water for at least 4 to 5 hours. Even in a pressure cooker, urad dal takes longer to cook.

    Green Chilli  :
    The green chillies in cooked or raw form give a fiery hot flavor. To reduce the fiery hot flavor the seeds and inner membranes could be removed which is effective at reducing the heat of the pod.

    Mustard Seeds :
    They are used as a seasoning rather than a base flavour in many Indian dishes, and they really perk up a lentil or rice dish when fried in a little oil with curry leaves . As a result, mustard seeds are excellent for adding flavour without adding fat to your diet.

    Rice Flour / Arisi Mavu:
    Rice flour is a type of flour that is made from finely ground rice. It differs from rice starch, which is typically made by steeping rice in lye. Rice flour is a popular wheat flour substitute.

    How to Make Ulundu Kozhukattai

    1. Bring water to a boil in a sauce pan. When it starts to boil, take it off the heat and add in salt and oil.
    2. Add in rice flour and mix well. It will get thick. Now cover it and let it cool down.
    3. Now take urad dal in a bowl and cover it with water. Soak it for 2 hours.Now drain them and set aside.
    4. Take green chillies in a blender and crush it. Add in urad dal and pulse it few times till it is coarse mix.
    5. Now take it in a bowl and add some salt to taste and mix well.
    6. Take the urad dal mix and place it in a idli steamer. Steam it for 10 to 12 mins.
    7. Remove it and cool slightly, then crumble it using your hands.
    8. Now heat oil in a kadai, add in mustard seeds, urad dal and curry leaves.
    9. Add in the urad dal mix and saute well. Use your spatula to crumble it so it gets finer.
    10. Add in coconut and mix well. Remove the stuffing to a bowl and let it cool.
    11. Now take a small portion of ball and flatten it slightly. fill it with urad dal mix and cover it.Seal the edges.
    12. Place it in a steamer and steam for 7 to 8 mins.
    13. Remove it and let it cool for 5 mins. Remove it carefully from the steamer and Serve.

    Ingredients
      

    • For Dough:
    • 1 cup Rice Flour / Arisi Mavu
