I used cheese in the filling, if you want to make it vegan you can skip it or use dairy free cheese, The filling for this can be quite endless, you can fill it with anything you like, chicken, spinach, fresh veggies or even some sauted veggies.

Serves: 2 to 3
Oil or Butter for making pancakes
For Grinding:
Tofu – 100 grams
Salt to taste
Turmeric Powder / Manjal Podi – 1/2 tsp
Milk or Unsweetened soy milk – 1/2 cup or as needed
Besan / Gram Flour / Kadalai Mavu – 1/2 cup to 3/4 cup
For Filling:
Olive Oil – 1 tsp
Garlic – 2 cloves chopped finely
Onions – 1 medium size sliced thinly
Capsicum / Bell Peppers – 1/4 sliced thinly
Red Chilli Flakes to taste
Salt to taste
Oregano – 1/2 tsp
Coriander Leaves – 3 tblspn finely chopped
Cheese as needed grated (optional) (use dairy free cheese)
Take grinding ingredients in a blender and make it into a fine puree. Set aside.
Now heat little oil in a pan, add garlic and saute for a min. Add in onions, bell peppers and saute for few mins.
Now add in salt, oregano, chilli flakes and mix well.Add coriander leaves and mix well. set aside. filling done.
Now pour the batter in a nonstick greased pan and cook for few mins on one side, flip over and cook for few more mins on other side as well till crispy.
Now flip over and spoon some filling on one side, top with cheese, fold the omelete.
Cover and let the cheese melt.

add in besan / gram flour |
make it into a puree |
Now take ingredients for filling |

add in bell peppers |
saute for few mins |
add in salt, red chilli flakes and oregano |
toss well |
add coriander leaves |
mix well..filling done |
now spread tofu over the tawa |
cook for few mins on base and flip over |
now cook on other side for few mins as well |
spoon some filling in |
top with cheese |
fold over |
cover and let the cheese melt |

I made this today.ilwas very tasty but I used paneer instead of tofu and it was very soft.broke into pieces while transferring from tawa to the plate.
