Vegetable Clear Soup Recipe / Veg Clear Soup Recipe

Soup are my absolute comfort food recently. I am making them often and having it for lunch. Because they are filling plus they feel light on the tummy. This soup is very healthy one, it taste so clean without much ingredients and you can taste the vegetables in this. I loved the onion, garlic and ginger flavour that comes from the soup. So healthy and perfect when you are in diet.

Hope you will try this out and let me know how it turns out for you..

Preparation Time : 5 mins
Cooking Time : 15 to 20 mins
Serves : 3 to 4

Ingredients:


Oil – 1/2 tsp
Ginger – 1 tsp thinly juliened
Garlic – 3 cloves thinly juliened
Onion – 3 tblspn finely chopped
Spring Onion White Part – 2 chopped finely
Mixed Vegetables ( Carrots, Beans, Cauliflower, Capsicum) – 2 cups chopped finely
Spring Onion Green Part – 2 chopped finely
Salt to taste
Pepper Powder to taste
Water – 4 to 5 cups
Cornflour / Cornstarch -2 tsp mixed with some water

Method:

Heat oil in a sauce pan, add in ginger, garlic, onion, spring onion white part and saute for a min.

Add in veggies and saute for 5 mins or so.

Add in water, and cook untill veggies are done.

Add in salt, pepper and cornflour water and mix well. It will thicken the soup.

Add in spring onion and mix well.

Serve hot.

Pictorial:
Take all your ingredients
Heat oil in a sauce pan

add in some chopped onions
chopped white part of spring onions
saute for a min
add in finely chopped veggies
saute them
i sauted till the raw smell leaves away
add in water
mix well
add in salt
pepper powder
take some cornflour
mix it with some water and pour it in
mix well
serve
add in spring onion
mix well
serve

    luke warm yes but check the ginger cause it might be bit spicy for the kids
