    Veg Clear Soup Recipe

    Clear Soup Recipe is made with mixed vegetable, ginger and seasonings which is similar to my chicken clear soup. Simple veg clear soup has vegetables added in a clear stock is perfect for sore throat or during winter season just like my other soups.     Clear Soup

    Soup are my absolute comfort food recently. I am making them often and having it for lunch. Because they are filling plus they feel light on the tummy. This soup is very healthy, it taste so clean without much ingredients and you can taste the vegetables in this. I loved the onion, garlic and ginger flavour that comes from the soup. So healthy and perfect when you are in diet.

    About Clear Soup

    Clear soup is nothing but a healthy light soup with vegetables. The soup taste mainly depends on the clear broth you use. You can use either veg stock or chicken stock in this recipe. Make sure you check chicken clear soup and egg drop soup.

    I added a mixture of chopped vegetables in this soup. You can use any vegetables that you prefer. I used carrots, cabbage, beans, cauliflower and capsicum in this soup. But for better taste you can use mushrooms, baby corn, bamboo shoots as well.

    To make this soup Chinese take-out style, make sure you thicken the soup with cornstarch which gives the soup viscosity. Also use some kind of stock like chicken stock or veg stock. Clear soup is usually pretty bland to look at it, so to make it restaurant style, sprinkle it with chopped green onions and red chillies for a pop of colour and flavour.

    Clear Soup Ingredients

    Fats to use - for better flavour while making clear soup. Use either coconut oil, ghee or butter.

    Aromatics - I used onions, spring onions, ginger and garlic as aromatics which adds a wonderful flavour to the soup.

    Vegetables - I added a mixture of chopped vegetables in this soup. You can use any vegetables that you prefer. I used carrots, cabbage, beans, cauliflower and capsicum in this soup. But for better taste you can use mushrooms, baby corn, bamboo shoots as well.

    Stock or Broth - for making this soup completely vegetarian, you can add vegetable stock. Or for better flavour you can use chicken broth.

    Seasoning - salt and black pepper are the main seasoning in this soup. But you can flavour it with Italian seasoning, bay leaves and spices of choice.

    How to Make Clear Soup (Stepwise Pictures)

    Sauteing Aromatics

    1)Heat oil in a soup pot or casserole. Instead of oil you can use some ghee or butter for better flavour.

    2)Add in ginger in the oil. I added thinly juliened ginger. You can finely grate or mince ginger as well. Along with ginger add chopped garlic which adds wonderful aroma and flavour.

    3)Add in finely chopped onions. Shallots of sambar onions adds better flavour.

    4)Add in spring onion whites as well. This is optional as well.

    5)Saute onions, ginger in oil for 1 minute till aromatic and fragrant.

    Adding in Vegetables

    6)Now to the sauted aromatics, add in vegetables. I am using carrots, beans, cabbage, cauliflower and capsicum. You can skip or add more vegetables.

    7)Stir fry the vegetables for 4 to 5 minutes till the raw smell leaves from the vegetables.

    Making Soup

    8)Now to form base of the soup, we are going to use either veg stock or chicken stock. Using broth adds better flavour to the soup. But you can use water instead of broth as well.

    Bring the soup to a full boil, reduce the heat and cook until the vegetables is cooked completely.

    Pro tip: You can use homemade broth or store bought broth as well.

    Seasoning Soup

    9)Season the soup with salt. If you are using store bought broth, taste the soup and adjust the salt.

    10)Add in black pepper powder.

    Thickening Soup

    11)Clear soup can be served as it is without adding any thickener. But I like to add a bit of cornstarch slurry to thicken the soup slightly. So it is not watery.

    Take cornstarch in a small bowl. Add some cold water to it and mix till it is smooth and lump free.

    12)Pour this cornstarch slurry into the soup and heat through so it thickens.

    13)Once the soup comes to a full boil. Take it off the heat.

    14)Add in spring onion greens or chopped coriander leaves.

    15)Mix well. Your clear soup is ready.

    16)Serve clear soup hot.

    Expert Tips

    • Instead of using water, you can use stock of your choice.
    • You can add any vegetables in this soup. Chicken, prawns, tofu can be used.
    • You can flavour the soup with Italian seasoning, spices of choice.
    • Instead of using oil, you can add butter or ghee.

    Storage & Serving

    You can store cooked soup in fridge upto a week in an air tight container. Reheat in microwave for one minute or on stove top till bubbly and serve hot.

    You can serve the soup on its own in a bowl or with cooked dim sum, spring rolls or wontons.

    Equipment

    • Cooking pot

    Ingredients

    • 1 tsp Oil | Ghee | Butter
    • 1 tsp Ginger thinly juliened
    • 3 cloves Garlic thinly juliened
    • 3 tbsp Onion finely chopped
    • 2 no Spring Onions (whites & greens) finely chopped
    • 2 cups Mixed Vegetables Carrots, Beans, Cauliflower, Capsicum
    • 1 tsp Salt
    • 1 tsp Black pepper powder
    • 5 cups Water or Stock
    • 2 tsp Cornstarch

    Instructions

    • Heat oil in a sauce pan, add in ginger, garlic, onion, spring onion white part and saute for a min. Add in veggies and saute for 5 mins till raw smell leaves.
    • Add in water or stock, and cook until veggies are cooked completely. Season with salt and pepper.
    • Add cornstarch mixed with some water into the soup and mix well. It will thicken the soup. Add in spring onion greens and mix well. Serve hot.
