Croquettes is a deep fried breadcrumbed rolls or balls made with mashed potatoes, meat filling, veg filling or cheese and fried till crispy. This vegetable croquettes has a mixture of vegetables which is coated with breadcrumbs and fried.

Croquettes are my favourite. I love the creamy interior and the crispy exterior which is the character of a croquettes. This version is my favourite of all croquettes i ever made.
About this Recipe
A croquette is a type of dumpling made of a thick binder and a filling that is breaded and deep-fried; it is served as a side dish, snack, or fast food all over the world. A thick bechamel or brown sauce, mashed potatoes, wheat flour, or wheat bread are commonly used as binders.
The croquette originated in France, and it was in 1898 that Monsieur Escoffier, the founder of classical French cuisine, began to write down the recipe with the assistance of Monsieur Philias Gilbert. The traditional formulation and procedures were still in place.

This one i made and served it with a cup of tea..You don't need any dipping sauce for it, but tomato ketchup or sweet chilli sauce or my garlic sauce taste fantastic with this..And this is great for kids.They will love it for sure.
Ingredients for Vegetable Croquettes Recipe
- Butter - 1 tblspn + 3 tblspn
- Onion - 1 sliced thinly
- Ginger Garlic Paste - 1 tblspn
- Green Chilli-2 chopped finely
- Carrot - 1 large grated
- Cabbage - 3 cups shredded
- Beans - ½ cup chopped finely
- All Purpose Flour / Maida - 4 tblspn
- Milk - 1 cup or as needed
- Breadcrumbs - as needed
- All Purpose Flour / Maida - ¼ cup + ¼ cup
- Oil for deep frying
Onion:
Onions are considered a basic ingredient or the foundation of Indian cooking and are used to make any gravy, curry, or bhuna dish. The flavour and aroma of onion transforms any ordinary dish into a mouthwatering and delectable one.
Cabbage :
Cabbage can have a mildly bitter flavour. Cooking removes the bitterness, but not all recipes call for it. If your cabbage tastes bitter and you intend to serve it raw or in a salad, such as coleslaw, remove the bitterness before serving.
Breadcrumbs :
Dry breadcrumbs are commonly used as a topping for gratins, casseroles, and other similar dishes to add a crunchy textural dimension. Fresh breadcrumbs are an excellent binding agent, which is why they are frequently used in meatloaf and stuffing recipes.
How to Make Veg Croquettes
- Heat 1 tblspn butter in a kadai and add in onions,chilli,and ginger garlic paste. Cook this for few mins.
- Now add in all veggies and cook for 6 to 8 mins. Add salt and mix well. Set aside.
- In the same pan, add 3 tblspn of butter and melt it. Add in flour and cook till raw smell leaves.
- Now add in flour and fry for few minutes..Pour in milk slowly while mixing so that no lumps are formed.
- Season with salt and mix well..Add in veggies and mix well.
- Cook this until the mixture comes together.
- Tip this to a bowl and set it in fridge..Let it chill for 30 mins..
- Now take small portions out this and shape into round shape or your favorite shape..
- Now dip the croquettes into flour, then in some flour which is mixed with water and lastly in breadcrumbs..
- Continue doing this till the entire batter gets over..
- Now fry the croquettes in oil till golden on both sides..
- Drain on a paper towel..
- Serve with ketchup or mayo.

Prepare your veggies |
heat little butter in a pan |
add onions |
add ginger garlic paste |
cook till golden |
add chillies |
add veggies |
toss well |
cook for 5 to 6 mins |
add salt |
mix well |
set this aside |
melt some butter in the same pan |
add flour |
cook till lightly golden |
add milk |
mix well |
cook till it thickens |
add veggies |
mix well |
set aside in fridge so it cools |
divide it into balls |
time to assemble |
first coat it in plain flour |

dip in plain flour which is mixed with water |
remove it |
roll in breadcrumbs |

deep fry in oil |

My daughter can’t stand vegetables. Can I blend it before adding to the flour mixture and then make the croquettes. Please advise. My daughter loves your blondis and brownie recipes. I make them with sathu maavu😁
