    Vegetable Egg Kathi Rolls Recipe with step by step pictures. An Indian flatbread wrap filled with egg and sauteed veggie. It is a very good option for quick breakfast.

    Vegetable Egg Kathi Rolls

    I love kathi rolls, they are so easy to make and so tasty to eat..This is a vegetable kathi rolls but it has eggs over the roti. if you want it entirely vegetarian, just skip the eggs and make it only with veggies. You can even add cheese over the veggies, roll it and just heat it on tawa till the cheese melts..Hope you will give this a try and let me know how it turns out for you..

    Ingredients for Vegetable Egg Kathi Rolls

    • Rumali Roti / Tortillas / Chapatis - 4
    • Oil - 1 tablespoon + for pan frying roti
    • Onion - 1 medium size sliced
    • Tomato - 1 medium size sliced
    • Carrot - 1 medium size sliced in juliene
    • Cabbage - 1 cup sliced thinly
    • Pav Bhaji Masala Powder - 1 tablespoon (Recipe here)
    • Salt to taste
    • Lemon Juice to taste
    • Coriander leaves a handful finely chopped
    • Eggs - 4

    How to Make Vegetable Egg Kathi Rolls

    1. Start by making the filling. Heat oil in a kadai. Add in onions along with all veggies.
    2. Season with some salt and toss well for 5 to 8 mins till the veggies are cooked
    3. Add in pav bhaji masala and mix well for a min.
    4. Add in lemon juice, coriander and mix well. Filling done.
    5. Crack open eggs and beat them well.
    6. Heat a tawa, drizzle some oil over it.place a roti on the tawa, pour some egg over it, spread it evenly, flip over and cook till the eggs are done.
    7. Now remove to a plate, spoon some filling over it, cover it from all the sides, roll it.
    8. Serve.

    Vegetable Egg Kathi Rolls Recipe Step by Step

    Take all your ingredients
    Heat little oil in a pan, add in all the veggies including onions
    saute them for a min
    add in little salt
    cook them well
    it will get soft and cooked
    add in pav bhaji masala
    toss well
    add little lemon juice
    sprinkle some coriander leaves
    toss well..Filling done
    beat up some eggs in a bowl
    take some rumali roti, put them on a tawa
    pour some egg over it
    spread it
    time to flip
    flip over and cook
    now the egg is cooked
    remove it to a plate
    spread some filling
    fold from this side
    roll them
    fold from this side too
    roll roll roll
    done
    enjoy
